Disney Cruise Line to begin work on Lighthouse Point this year

Disney Cruise Line previously announced a new project to add a second private island to their destinations. Lighthouse Point in Eleuthera will complement Castaway Cay, giving families the opportunity to enjoy the site’s beautiful beaches and explore nature, as well as enjoy the broader tourism offerings in Eleuthera.

Disney Cruise Line is hoping to begin work on this project this year. DCL’s vice-president of public affairs, Kim Prunty, told Bahamian media that Disney will deliver 120 construction jobs – some 80 percent of which will be Bahamian – for a cruise destination whose build-out will be complete by the first half of 2024.

Disney also released a 550-page Environmental Impact Assessment (EIA) detailing the project’s economic impact. Once that is approved along with the Environmental Management Plan (EMP), Disney is hopeful work can start this year and be completed in 2024. “Assuming we’re able to receive government acceptance of the EIA and Environmental Management Plan (EMP) this year, and get through the consultation and permitting with the Ministry of Works, we’d like to begin work this year with completion in the first half of 2024,” said Prunty.

Prunty also shared that Disney plans on having a ship in port at Lighthouse Point three to five days a week. The number of guests on Disney Cruise Line ships will range from 11,400 to 26,600 per week, depending on the season. Guests visiting Lighthouse Point will be contained in designated areas within the project site and not allowed access to sensitive areas or allowed to roam freely from paths and guest areas.

Around 25 percent of the Lighthouse Point property, some 190 acres, is being donated to the Government and Bahamian people, meaning they will have more land than Disney will develop, with the majority left untouched.

Baby Rhino ‘Ranger’ is Loving His Time on the Savannah on Kilimanjaro Safaris

Baby Rhino at Kilimanjaro Safari

Anyone who loves Disney’s Animal Kingdom theme park knows about the true joy of watching new baby animals be born and grow there. Baby White Rhino, Ranger, was born on October 25th, 2020. He was recently introduced to his permanent home at Kilimanjaro Safaris, and we have an update on this sweet little addition to Animal Kingdom‘s wildlife habitat.

Baby Rhino 'Ranger' is Loving His Time on the Savannah on Kilimanjaro Safaris

Ranger is a White Rhinoceros, which is the second-largest land mammal. He rejoined other members of his species about two weeks ago and is acclimating well. Baby Ranger loves to wallow in the mud, which will help to protect his skin from insects and the sun. He needs to get lots of exercise, and he seems to be encouraging the adults to get moving as well! He is very playful and engages with everyone he sees. That’s good news because White Rhinos can live to be between 40 and 50 years old, so they’ll need to get along for a very long time!

White Rhinos have been in the “near threatened” category of endangerment for several years. Their protection and preservation have been an ongoing effort since it was discovered that the population had dwindled to less than 100 back in 1895. The happy news is that today, Ranger is one of 20,000 of his species. With continuing care and protection, White Rhinos have hopefully put their worst days behind them.

Rare Star Wars shows and movies coming to Disney+

Star Wars Disney+
Star Wars Disney+

Disney+ is adding some additional Star Wars animation content to its digital library. It’s quite surprising since some of these shows have not been on television in ages!

First, Genndy Tartakovsky’s Star Wars: Clone Wars comes to Disney+ in April. The series follows Obi-Wan Kenobi and Anakin Skywalker during the conflict that erupted after Attack of the Clones between the Galactic Republic and the Confederacy of Independent Systems. The series first broadcast on Cartoon Network from 2003 until 2005, and this is the first time it will be available to watch legally since it debuted on DVD during those same years.

INSTRUCTIONS:

  • Line your baking dish with enough parchment paper so it covers the bottom and comes up the sides (you will use the sides to pull it out of the pan before cutting). Set aside.
  • To make the crust, crush the graham crackers in a food processor until they become a fine crumb. Then, mix them with the melted butter and spread into the bottom of your baking dish. Use the bottom of a drinking glass or the palm of your hand to make sure the crust is firmly pressed into place.
  • Transfer the crust to the freezer while making the filling.
  • Place the softened cream cheese in the bowl of your electric mixer and mix on medium for 2-3 minutes, or until smooth.
  • Add the powdered sugar, sour cream, vanilla, lemon juice, and salt to the cream cheese and mix for another 1-2 minutes, or until everything is evenly incorporated.
  • Add the heavy cream and slowly increase the speed to medium high. Mix for an additional 4-5 minutes, or until the cream cheese mixture is light and fluffy and form soft peaks.
  • Transfer half of the filling to a large bowl. Divide the rest of the filling between 3 smaller bowls. Add a little of the pink, blue, and purple coloring to the small bowls and mix until the color is evenly combined (leave the large bowl white).
Minnie Unicorn cheesecake
  • Scoop the white filling on top of the crust and use a spatula to spread it out. Add dollops of the different filling colors on top of the white and use a butter knife to swirl the colors together.
  • Cover with plastic wrap and transfer back to the freezer. Allow to set for at least 4 hours (you can prep the decorations while waiting).
  • To make the unicorn horns, split each piece of taffy into 3 pieces. Heat each piece for 5-7 seconds in the microwave (you don’t want them to overhear or they’ll become too sticky to handle). Then, roll the taffy into a long rope with tapered ends. Fold it down the middle and twist the 2 ends together until you get to the top.
Minnie Unicorn cheesecake
  • Then, dip the horns into your sanding sugar. If you are having trouble getting the sugar to stick you can dab the taffy with a bit of water first. Place the horns on a piece of wax paper to set.
  • To make the bows, trace the bow food cutter from the Minnie Mouse set onto a piece of cardstock or computer paper. Cover with wax paper.
  • Melt the pink candy melts in a heat-proof bowl in 30 second intervals, at 50% power, stirring between each interval until it’s smooth and fully melted. Use a toothpick dipped in the melts to draw the bows onto the wax paper.
Minnie Unicorn cheesecake
  • To make the faces, you can draw the face design onto your cardstock as a guide. Melt your chocolate chips or dark chocolate melts as you did with the pink melts, draw 3 ovals onto wax paper, and add eyelashes to 2.
  • Take the baking dish out of the freezer 15-20 minutes before you are ready to enjoy the cheesecake. Pull them out using the sides of the parchment paper. Firmly press down on the Minnie cutter to cut through the filling and crust layers to create the shapes. You can cut the extras into squares or whatever shapes you wish.
  • Transfer the Minnie bars to your serving plates. Top with the bows and faces and add the horns using toothpicks. Any leftovers can be kept in the refrigerator (or in the freezer for longer storage).
