These Jessie’s Cowgirl Muffins will have you saying yeee hawwww!

Disney created a recipe inspired in our favorite cowgirl as part of the Disney Check initiative that promotes the importance of balanced nutrition. You can easily identify healthier food and beverage options that meet Disney nutrition guideline criteria in stores, online, disney theme parks and resorts by looking for the Mickey with a checkmark.

All the food options that feature that symbol meet nutrition guidelines that are based on rigorous, science-backed nutrition standards and are continually updated to remain current. And these Jessie’s Cowgirl Muffins are no exception! They are healthy, delicious and easy to make, just take a look at the recipe:

JESSIE’S COWGIRL MUFFINS

INGREDIENTS:

Muffins

  • 1 cup of almond flour
  • 1 cup of oat flour
  • 1 tsp of baking soda
  • 1/2 tsp of baking powder
  • 1 tsp of ground cinnamon
  • 1/2 tsp of ground ginger
  • 1/4 tsp of nutmeg
  • 1/2 tsp of kosher salt
  • 1/2 cup of unsweetened applesauce
  • 1/4 cup of honey
  • 3 tbsp of avocado oil
  • 3 large eggs
  • 2 tsp of almond extract
  • 1 1/2 cups of coarsely grated carrots, 1/4 cup will be sued for sprinkling
  • Zest of 1 orange
  • 1/4 cup of chopped walnuts (optional)

Hat Topping

  • 1 small Honeycrisp apple, sliced cross-wise and cored
  • 1/2 cup of beet juice
  • 1/3 cup of silvered almonds
  • 2 tbsp of creamy peanut butter
  • 10 raspberries, for hat topping

Additional Items

  • Standard (12 cup) muffin pan
  • 10 paper liners
  • 2 medium mixing bowls
  • Large mixing bowl
  • Whisk
  • Spoon or ice cream scoop
  • Cutting board
  • Small knife
  • Paper towels

INSTRUCTIONS:

For Jessie’s Cowgirl Muffins:

  • Preheat oven to 350F and line a muffin pan with paper liners.
  • In a medium bowl, whisk together the almond flour, oat flour, baking soda, baking powder, spices, and salt. Kids can help whisk. Set aside.
  • In a large bowl, combine the applesauce, honey, oil, eggs, almond extract, 1 1/2 cups grated carrots, orange zest, and walnuts, if desired, and mis until evenly combined. Fold in the dry ingredients and mix just until incorporated.
  • Spoon the batter into ten prepared muffin cups all the way to the top. Have children top each muffin with the remaining 1/4 cup of grated carrots.
  • Bake for 25 to 2 minutes, until the muffins are golden brown on the edges just barely spring back to the touch. Be careful to not over bake. Let cool.

For Jessie’s Cowgirl Hats:

  • Meanwhile, add the beet juice and apple slices to a medium bowl to let stain, about 5 minutes.
  • Once the apple slices are bright red, place them on a cutting board, pat dry with a paper towel and then make tiny cuts along the rim of each apple slice. Insert an almond sliver into each slit to resemble the edging on Jessie’s hat.
  • Dip the raspberries in a small amount of peanut butter and place onto the center of each hat, peanut butter side down. Kids can do this part.

To serve:

Have kids top each muffin with a cowgirl apple hat and serve immediately.

From August 9th to 15th, there will be an invasion of Great Britain’s most popular songs by artists such as The Beatles, Ed Sheeran, The Rolling Stones, Adele, and more.  Guests can listen to their songs as they experience ICON Park’s signature attraction, The Wheel. 

Guests also have the option to be their own DJ by connecting their phone to the private capsules’ Bose speakers using The Wheel’s new state-of-the-art Bluetooth system.

In addition to the specially curated playlist, the 400-foot observation wheel will be lit up in red, white, and blue to represent the Union Jack, paying homage to Great Britain.

Dwayne Johnson Responds to the Celebrity Trend of Not Bathing. The internet is losing its mind after celebrities began sharing a dirty Hollywood secret… apparently many celebrities go long stretches without bathing, with many sharing they don’t bath their children until they “really need it” or are “visibly dirty” *cue the dun dun DUN music here*

Several big names in the industry including Jake Gyllenhaal (Spider-Man: Far From Home), Kristen Bell (Frozen), and celebrity couple Ashton Kutcher and Mila Kunis, shared that they don’t believe in daily washing or for those with kids, having them bathe every day. Regardless of anyone’s opinion on the matter, Jungle Cruise and Moana star Dwayne Johnson weighed in on his stance about the new trend/revelation, sharing he is “the opposite of a “not washing themselves” celeb.”

Johnson responded to a tweet asking: “Our work Slack has spent much time discussing celebrities who don’t wash themselves, but we’ve all decided that @TheRock can’t possibly be one of those stinky ones and we would all be weirdly heartbroken to find out otherwise.”

Dwayne quickly hopped on to share his washing routine, stating: “Nope, I’m the opposite of a “not washing” celeb. Shower (cold) when I roll outta bed to get my day rollin’. Shower (warm) after my workout before work. Shower (hot) after I get home from work. Face wash, body wash, exfoliate and I sing (off-key) in the shower.”

Save the Date for the ‘Descendants: The Royal Wedding’ Premiere. Wedding bells are ringing for Mal & Ben this week on Disney Channel! The bride and groom will say “I Do” this Friday on August 13, 2021, as long as they can handle the disruption from Mal’s disgruntled father Hades.

The Royal Wedding will be featured as an animated special and is expected to have a run time between 30 mins – 1 hour. The special will follow the events of Descendants 3 after Ben’s proposal to Mal, but the father of the bride will soon be crashing this fairytale wedding! Check out the trailer below:

Disney has shared that the choice to make an animated special versus another live-action film was an easy one as the entire cast and crew could not see themselves making another movie without Cameron Boyce who played Cruella de Vil’s son, Carlos. Cameron unexpectedly passed away in his sleep in July 2019 from a seizure brought on by complications with epilepsy. To honor his memory, the special refuses to recast the role and took on an animated spin.

Descendants: The Royal Wedding will premiere this Friday, August 13 only on Disney Channel, immediately following the debut of the new Disney Channel Original Movie SPIN.

Disney has yet to announce if/when the special would be added to the Disney+ roster, but we expect Descendants: The Royal Wedding to be added to the streaming service shortly after the premiere on Disney Channel. Could Disney Cruise Line start requiring vaccine documentation?

Yesterday Norwegian Cruise Line revealed that a federal judge ruled to temporarily halt enforcement of a Florida State Law prohibiting businesses from requiring customers to show proof of vaccination.

According to CNBC U.S. District Judge Kathleen Williams granted the preliminary injunction, allowing Norwegian to require vaccine documentation from customers while the case heads to trial. 

Does this mean that other Cruise Lines including Disney will be able to require vaccine documents before guests can sail?

  • COVID-19 Vaccination: Disney Cruise Line strongly encourages all eligible Guests to be fully vaccinated against COVID-19 before sailing. Guests who are fully vaccinated may choose to provide proof of vaccination in order to be exempt from pre-trip and Embarkation Day testing requirements (unless arriving from outside the United States) and travel insurance requirements. Keep in mind, vaccinated Guests arriving from outside the United States who are required to undergo the rapid test on Embarkation Day will not be charged for the test. Additionally, travel insurance is not required for vaccinated Guests arriving from outside the United States on sailings originating in the United States. The US Centers for Disease Control and Prevention (CDC) considers people to be fully vaccinated 14 days after the final dose has been administered.
  • Pre-Trip COVID-19 Testing: All Guests (adults and children) must provide proof of a negative COVID-19 PCR test (paid for at the Guest’s expense) taken between 5 days and 24 hours prior to the sail date. Disney Cruise Line has secured a special rate of $98.33 per PCR test (which includes a 3.5% processing fee) through our third-party vendor, Inspire Diagnostics. Guests may also obtain their PCR test from any independent testing supplier. Guests who are fully vaccinated may choose to provide proof of vaccination instead of undergoing COVID-19 pre-trip testing.
  • Embarkation COVID-19 Testing: All Guests (adults and children) are required to undergo a rapid PCR COVID-19 test administered by Inspire Diagnostics at the terminal prior to boarding. Guests with positive COVID-19 test results, as well as those in their travel party, will be denied boarding. The $65 test fee will be charged to the folio of all Guests 12 years and older. Disney Cruise Line acts as the paying agent for Inspire Diagnostics and will remit the entire cost of the COVID-19 test to Inspire Diagnostics. Guests who are fully vaccinated may choose to provide proof of vaccination instead of undergoing COVID-19 Embarkation Day testing.
  • Travel Insurance: For cruises departing from Florida through December 31, 2021, Guests 12 years of age and older must provide proof of a valid travel insurance policy that meets coverage requirements. Guests who are fully vaccinated may choose to provide proof of vaccination instead of obtaining travel insurance.
  • Embarkation Day Health Questionnaire: Guests are required to complete a health questionnaire related to COVID-19 and gastrointestinal illnesses on Embarkation Day. Guests are also required to attest as to whether they have experienced or are currently experiencing symptoms of COVID-19, or have been in contact with anyone suspected of or confirmed as having COVID-19 within the previous 14 days.
  • Face Coverings: All Guests (ages 2 and up, including those who are fully vaccinated against COVID-19) are required to wear face coverings indoors, except when in their staterooms or actively eating or drinking (while stationary and maintaining an appropriate physical distance). Face coverings are not required for Guests outdoors while on board the ship and at designated locations on Disney Castaway Cay. See “Top Things You Need to Know” below to learn more about face covering requirements.
  • Hand Sanitizers: The number of hand-sanitizing stations has increased throughout our ships.
  • Signage: Additional signage has been installed highlighting recommendations from health authorities on physical distancing, coughing etiquette and proper handwashing.
  • Reduced Guest Capacity and Physical Distancing: Considering guidance from the US Centers for Disease Control and Prevention and other medical experts, we’re reducing overall Guest capacity in our terminal and aboard our ships, and modifying our experiences to promote physical distancing.
  • Reimagined Experiences: While some experiences have been modified to accommodate new health and safety measures, you can be sure entertainment to inspire is always front-and-center for the entire family. Our ships are overflowing with magic—from Characters delighting Guests in new and entertaining ways to Broadway-style spectaculars.
  • World-Class Dining: We’re serving up diverse global cuisines and classic casual bites inside themed restaurants peppered with Disney magic. Quick-service food and beverage locations still offer all-you-care-to-eat treats with service attendants available to help you satisfy your cravings at select times.
  • Onboard Medical Capabilities: While we are taking a multi-layered approach to help promote health and wellness, we have a plan for managing any suspected or confirmed case of COVID-19. We have added a Public Health Officer and continue to staff our ships with nurses and physicians experienced in emergency or critical care and certified in advanced cardiac care and life support. We have developed protocols for screening for and responding to symptoms of COVID-19. Appointments with the Health Center to evaluate COVID-19 symptoms are free of charge. Medical facilities are equipped with isolation, monitoring care, ventilators, oxygen, laboratory and pharmacy services. The ship’s medical staff adheres to the requirements of the American College of Emergency Physician Health Care Guidelines for Cruise Ship Medical Facilities.
  • Crew Members: All Crew Members will be screened for symptoms of illness before every shift. Crew Members showing any symptoms or feeling unwell will refrain from working.

As of right now, guests do not need to be vaccinated to cruise but as you can see above there is lots of testing to make sure that you or your family are not bringing COVID onboard the cruise ship.

The Disney Magic at Sea sailings from the UK already require guests to be vaccinated, and they perform a rapid test before boarding.

At this time, it is not yet known if Disney will follow the Norwegian Cruise Line’s lead and begin asking for passenger COVID vaccination status before they board the Disney Cruise Line.

No changes to the Policies listed above have been announced. All eyes are on the Disney Cruise Line sailings in August to see if what is in play works or if modifications will have to be put in place for guests.

Halloween has arrived! Or, at least the Disney Halloween Merchandise has! Lots of hauntingly cute new items made their debut at the Disney Parks, and online at shopDisney this morning. The Disney Parks collection is full of Mickey pumpkins, plaid accents, and even a hint of Oogie Boogie.

First up, new Halloween Minnie ears! These are super cute, with a fabulous rustic fall charm They are a black and grey plaid, with an orange sequin bow. On the side is embroidery that says “Haunt It”! We will for sure haunt it with style!

There are Halloween Spirit Jerseys available at the parks, and online. Both have a fun Mickey pumpkin design. The shopDisney version says Happy Halloween, instead of the Disney Park logo though.

We can’t have new ears, and Spirit Jerseys, without a new Loungefly!! The new Loungefly has not-so-scary Halloween icons, mixed with Mickey and Minnie pumpkins. There is also a fabulous plaid accent, which coordinates with the new ears perfectly.

Actress Jane Withers Has Passed Away at Age 95. Disney Fans knew her best as the partial voice of Laverne the gargoyle in Disney’s The Hunchback of Notre Dame after the passing of Mary Wickes during post-production and went on to voice Laverne in the sequel film. Wither’s most notable work was featured in Aunt Sally’s Kiddie Revue (Radio Show), Bright Eyes (film), The Alfred Hitchcock HourThe Love Boat, “Murder, She Wrote,” Sure, Sure, Shirley (Broadway) and was featured as a returning character (Josephine the Plumber) in Comet commercials in the ’60s. Her final role was as a voice actress for The Hunchback of Notre Dame 2 as Laverne.

Jane’s daughter, Kendall Errair, shared the news of her passing with Deadline: “My mother was such a special lady. She lit up a room with her laughter, but she especially radiated joy and thankfulness when she was talking about the career she so loved and how lucky she was.”

We are hearing word that Disney Princess Meet & Greets might be returning soon to Walt Disney World! Right now if you would like to meet the Disney Princesses you will have to see them in one of the Character Cavalacades at either the Magic Kingdom or Epcot.

When Covid-19 hit Disney Character Meet & Greets were one of the first things to go, but slowly Disney has been bringing back entertainment at the Disney World Theme Parks. Over in Epcot we have had socially distanced Meet & Greets with Jasmine and Anna & Elsa which is very cute and protects the Disney Princesses from possibly being exposed.

Today we are hearing word that Disney Princess Meet & Greets might be returning just in time for World Princess Week on August 23rd. (that is a big might)

On August 23, Disney will take the celebration to the next level with the first-ever World Princess Week – a weeklong celebration aimed at inspiring a million acts of kindness around the globe. Also on the Disney Channel Disney will be kicking off a special to kick off Princess Week called Disney Princess Remixed – An Ultimate Princess Celebration.

‘Disney Princess Remixed – An Ultimate Princess Celebration’ Musical Special Coming to Disney Channel and Disney+. Come one, come all! A new musical special celebrating the stories and tales of the Disney Princesses is coming to Disney Channel and Disney+. Disney Princess Remixed will debut on Friday 27th August on Disney Channel in the US at 7:30 pm EDT/PDT and on Disney+ in select markets to coincide with World Princess Week.

To me, that sounds like the perfect opportunity to bring back Disney Princess Meet & Greets at Walt Disney World. However, with the COVID-19 Delta variant on the rise in Orange County and Face Masks returning to Indoor areas at Walt Disney World does August sound a little too ambitious for the return of Meet & Greets to Walt Disney World?

I have a feeling that everything is going to be pushed as close to October 1st for the Walt Disney World 50th Anniversary Celebration as possible. We already know that we will be able to see Mickey & Friends in their new EARidescent outfits so it is likely to believe that any Character Meet & Greets might be pushed back too… (No word on if we will be able to get close to Mickey & Friends)

So I am uncertain if this Disney Gossip is true… I think maybe Disney had plans to do this but with the COVID-19 Delta variant things are being pushed further out till more people get vaccinated and numbers start to decline again. Maybe we will see more socially distanced Meet & Greets like Epcot has been doing or the return of Disney Princess Character Meals. Only time will tell.
