2017 Ranking of Top 10 Pastry Chefs in America Includes Two Walt Disney World Chefs

Dessert Professional Magazine has released their “Top 10 Pastry Chefs in America” and two of Walt Disney World’s very own Pastry Chefs have made the list. After sampling some of the amazing desserts Walt Disney World has to offer I can understand why! At an event to honor the winners, Pastry Chef Stefen Riemer and Pastry Chef Olivier Saintemarie were both invited to New York City on June 5th to showcase their talents.

As executive pastry chef on the Culinary Development team for Walt Disney Parks and Resorts, Riemer creates new pastry menus and brands like Amorete’s Patisserie and the The Ganachery at Disney Springs. He was classically trained in Europe and joined the Disney Culinary team in 1999. This is not the first time Riemer has been singled out from among his peers. He has also received the prestigious Walt Disney Legacy Award for outstanding achievement.

“I am so honored to be recognized, but a chef is nothing without a great team and the influence of the people surrounding him,” said Riemer.

If you have been to been to the Chefs de France restaurant at EPCOT you have more than likely tasted the amazing desserts that have come out of Chef Saintemarie’s kitchen. He started at the French pavilion in World Showcase in 2014 where he opened the new bakery and production kitchen. Before his life with Disney he also was classically trained in Europe after completing a year in the French Navy. After moving to London he then joined Disney Cruise Line in 1999 where he was executive pastry chef. Currently he oversees the bread and pastry production for Les Halles Boulangerie-Patisserie, Les Chefs de France, Monsieur Paul and L’Artisan des Glaces.

“Stefan and I met when we both joined the Disney company in 1999, and it was such an honor to be there together in New York receiving the award, in the company of such notable chefs,” said Saintemarie.

Disney Store to Unveil New Product Collections and Collectibles at D23 Expo 2017

Disney Store today announced the new collections and Limited Edition sets to launch at this year’s D23 Expo 2017, Disney’s ultimate fan event held at the Anaheim Convention Center July 14-16. The never-before-seen collections celebrate milestone anniversaries and everyone’s favorite Disney, Pixar, Marvel, and Star Wars characters.

D23 Expo 2017 attendees will be introduced to the new Disney Designer Collection and get a first look at the newest collections debuting at this year’s event, including exclusive Disney Store pieces from Her Universe, the Art of Snow White collection, MXYZ Vinyl Mini Blind Box Collectibles, and, for the first time ever, a D23 Expo Marvel collection from Disney Store.

In addition to the chance to shop special products not yet available to the general public, fans will have the opportunity to meet some of the artists and designers who created these exciting new collections.

Highlights of the collections include:

Find Your Stroller at the Disney Parks with the Stroller Spotter

Taking a stroller to the Disney theme parks, has it’s pluses and minuses. The plus of course is a place for the little to rest their weary legs, and somewhere to hold all the goodies. One of the downsides, is trying to find it after a ride and it’s been moved! Well the Stroller Spotter is here to fix that issue!

Stroller Spotter is an 18” Illuminated antenna that straps onto the handle of any stroller, wheelchair, and scooter and allows for a parent to quickly identify their stroller in a crowd at any amusement park. It is also a fun and unique way to display your favorite antenna topper! It comes in 8 colors and fits on any type of stroller.

These fun new gadgets are really incredible! I can also see the usefulness of using them outside of theme parks too! Disney Junior to Release Fifth ‘Sophia the First’ TV Movie Event, June 24th

On June 24th, 2017 Disney Junior will premiere the latest television movie event for its Sophia the First series. In “Sophia the First: The Mystic Isles” Sophia’s sister Amber will join Sophia on her newest adventure. Watch as they team up with new friends, in the magical world of Mystic Isles, to stop an evil CrystalMaster from taking away the magic of the enchanted land. See the trailer below:

You Can Make this Delicious Pongu Lumpia Snack from Pandora – The World of Avatar at Home!

Pongu Lumpia is one of the most popular snacks in Pandora – The World of Avatar. We have the recipe here to share with all of our fans so you can make it at home!

On Earth, lumpia is a spring roll of Chinese origin, commonly found as a popular street food snack in Indonesia and the Philippines. It is traditionally a mixture of savory vegetables and chopped meat filling rolled in a spring roll wrapper. However, the Disney Culinary Team developed the version sold at Pandora – The World of Avatar with a sweet spin – cream cheese and diced pineapple.

Pongu Lumpia (Pineapple Cream Cheese Spring Rolls)
Pongu Pongu, Pandora—The World of Avatar
Disney’s Animal Kingdom
Makes 10 Lumpia

10 spring roll wrappers
1 (8 ounce) package cream cheese, room temperature
2 cups diced fresh pineapple
1/2 cup sugar, divided
Oil for frying

1. Line a baking sheet with parchment paper or a silicone baking mat.
2. Carefully separate spring roll wrappers. Cover wrappers with moist paper towel to prevent drying.
3. Cut softened cream cheese into 10 equal pieces.
4. Place one spring roll wrapper on a cutting board. Place one piece of cream cheese in the center of the spring roll and spread evenly on wrapper, leaving a 3/4-inch border around the edges. Add 3 tablespoons of diced pineapple and sprinkle with 1/2 teaspoon of sugar.
5. Roll one edge of the wrapper towards the center. Fold in both sides and continue rolling. Moisten the edge with water to seal the lumpia.
6. Repeat with remaining spring roll wrappers.
7. Place lumpia on prepared baking sheet and freeze for 4 hours or overnight.
8. Preheat 1 inch of oil in a frying pan to 350°F. Fry lumpia for 3 minutes on each side, until golden brown. Drain on paper towels.
9. Roll in remaining sugar before serving.

CONFIRMED: Changes to 2018 Disney Dining Plans including Specialty Drinks

As we previously reported, rumors were swirling that alcoholic and other specialty beverages such as smoothies and milkshakes were going to be available with this year’s Dining Plans. Today, per the Walt Disney World website, we can officially confirm that those drinks will be an option to order with your meal. It also appears that dining plan rates have slightly increased.

Beverage Changes

Guests of all ages will be able to enjoy the following beverage options with their Dining Plan meal:

Artisan milkshakes
Fresh Smoothies
Premium hot chocolate
Soda, coffee, or tea

Guests 21 and over will be able to chose the following to enjoy with their Dining Plan Meal:

Beer or cider
Wine or Sangria
Mixed drinks and specialty cocktails such as a Rum and Coke

These specialty beverages will be available with quick service and table service meals.

Price Changes

Per the Disney website, prices for 2018 Disney Dining Plans have had a slight price increase. As of right now, we know what the new prices will be for adults on the dining plan.

A day visiting the Walt Disney World parks would not be complete without a snack break! While Disney allows you to bring in your own snacks, nothing truly compares to the delicious treats available throughout the Parks. I love walking down Main Street a soaking in all the amazing smells. Have a look at these four Disney favorites, and my personal pick…good news, they all qualify as a snack credit on the Disney Dining Plan.

Mickey Pretzel – Pictured above, the Mickey Pretzel has become an iconic Disney snack. I mean really, Mickey-shaped food just tastes better! I never visit Walt Disney World without enjoying one of these pretzels in front of the castle, they are large and make for an incredibly satisfying snack.

Dole Whip – No Disney trip is complete without enjoying a refreshing Dole Whip. A welcome frozen treat on a hot summer day, the Dole Whip has somewhat of a cult following among the Disney Community. This delicious soft serve snack can also be enjoyed as a float, with Dole pineapple juice!

Churro – In case you aren’t familiar with what a churro is…let me introduce you to this mouthwatering treat. A churro is a long strip of sweet dough, fried, and rolled in cinnamon and sugar. Don’t forget to hunt down a churro cart on your next vacation.

Mickey Ice Cream Bar – An ice cream bar is a classic summer vacation treat that kids have been enjoying for generations. My kids devour multiple ice cream bars on every visit!

Talking Skull Returns to “Pirates Of The Caribbean” After 11 Years

After an 11 year hiatus the Talking Skull that used to warn guests that “Dead Men Tell No Tales” has returned to the Pirates of the Caribbean attraction at Walt Disney World’s Magic Kingdom.

The Talking Skull is actually used for the Pirates of the Caribbean photo capture that was added this week. Guests can enjoy this photo as a part of Memory Maker or can be purchased separately through Disney’s PhotoPass service. Memory Maker is a great way to enjoy unlimited digital Disney PhotoPass photos captured at hundreds of locations throughout Walt Disney World including select attractions, dining locations, character meet and greets and family photos. The photos are conveniently connected to your online Disney account.

New Disney Dooney & Bourke Designs and an Update to a Classic for the Summer

Disney Dooney & Bourke bags have been a guest favorite for many years. In recent times each new season has brought us delightful new Disney Dooney & Bourke designs.

I remember when I got my first Disney Dooney eight years ago! It was part of the whimsical sketch collection, and I have cherished it ever since. Recently Disney updated the classic Sketch collection called “A Walk in the Park”. This new design was drawn in a coloring book style, and has many icons and characters from Disney Parks. Disney characters like Mickey, Minnie, Tink and Donald Duck dance across the artistic prints. Other great nods from the Disney Parks include Big Al’s guitar from the Country Bear Jamboree, a Hitchhiking Ghost from the Haunted Mansion, Jungle Cruise boats, and more! The collection is already available and comes in a Tote, a Zip Satchel, and a Crossbody Wallet.

The new “Walk in the Park” collection is also featured on a MagicBand 2. This retail MagicBand 2 is a limited release that comes presented in a specially designed box.

For a while the Disney Dooneys have been releasing in just a few different silhouettes. Fans of Dooney & Bourke handbags will enjoy the option of several new silhouettes being offered at Disney Parks this year. Some of these silhouettes were included with the monochromatic Pirates of the Caribbean attraction collection. These new silhouettes included are a Crossbody Bag with over-sized leather tassel and letter carrier bag with the same large tassel.

Of course what we’ve all been waiting for, is a preview of the two new collections coming this summer. The first is a continuation of the “Dream Big, Princess” collection with handbags inspired by Disney’s “The Princess and the Frog.” I love the all over design of a single image of Tiana, with a floral print that matches the flower on her dress decorating the rest of the bag.

The second handbag, is part of a new Haunted Mansion inspired collection. A Madame Leota-themed collection that has the infamous psychic we all know and love, and a beautiful deep purple hue.

The new handbags will launch on July 22 at the Marketplace Co-Op in Disney Springs. A launch party will also be part of the release and guests will also have the opportunity to meet Ian Ray, Creative Director for Dooney & Bourke from 10:30 a.m. to 12:00 p.m. These collections will also be released at Disneyland Resort on the same day.
