The new menu has offerings including Picadillo Beef Empanadas and Chicken Taquitos. Wash these down with a frozen drink from Dockside Margaritas and your taste buds will thank you.

Hi Chip and Co Fans! Today I’m back to continue our series on the European cities that Disney Cruise Line will be exploring this summer. My previous articles brought you glimpses of destinations in Italy, France, and Spain. KRISTIANSAND
Stroll along the boardwalk to the marina, which is brimming with restaurants and shops. Disney Channel has greenlighted two new original animated series – “Amphibia” and “The Owl House”. “Amphibia,” from Annie Award-winning director Matt Braly (Disney’s “Gravity Falls”), and “The Owl House,” from Dana Terrace, one of Variety’s “10 Animators to Watch,” whose credits include Disney’s “DuckTales” and “Gravity Falls” are both slated to premiere in 2019. They are both produced by award-winning Disney Television Animation (TVA). The announcement was made today by Eric Coleman, senior vice president, Original Programming and general manager, Disney Television Animation.
The network has also ordered a season four pickup for Disney TVA’s Annie Award-nominated “Star vs. The Forces of Evil” from creator Daron Nefcy.
Coleman said, “‘Amphibia’ and ‘The Owl House’ are both set in wildly imaginative worlds and share hallmarks of great Disney storytelling, including fantastical elements and memorable characters. Matt and Dana each bring a unique sensibility to their shows unlike anything else on TV right now.”
“Amphibia” is a comedy series that chronicles the adventures of 13-year-old, self-centered Anne Boonchuy who is magically transported to the fictitious world of Amphibia, a rural marshland full of frog-people. With the help of an excitable young frog named Sprig, Anne will transform into a hero and discover the first true friendship of her life. Braly serves as executive producer.
Executive-produced by Terrace, “The Owl House” is a horror-comedy series that follows Luz, a self-assured teenage human girl who accidentally stumbles upon a portal to the Demon Realm where she befriends a rebellious witch, Eda, and an adorably tiny warrior, King. Despite not having magical abilities, Luz pursues her dream of becoming a witch by serving as Eda’s apprentice at the Owl House and ultimately finds a new family in an unlikely setting.
The fourth season of “Star vs. The Forces of Evil” will follow teen princess from another dimension Star Butterfly (voiced by Eden Sher) and her best friend Marco Diaz (voiced by Adam McArthur) as they continue their adventures in Mewni and explore new dimensions. However, as things change in the royal palace Star will soon learn that running the kingdom is far more complicated than she once thought. Nefcy serves as executive producer. In its third season, “Star vs. The Forces of Evil” ranks as Disney XD’s #1 series in Kids 6-11 and Kids 9-14. The hardcover book “Star vs. the Forces of Evil: The Magic Book of Spells,” created by Disney Press, will be released in July 2018.
With World of Disney going under renovations at Disney Springs, Disney has introduced a brilliant way to still be able to get some of your more fashion-friendly finds at Disney Springs by opening up The Disney Corner! Located just next to the escalators to Lime Garage and across from the Polite Pig, The Disney Corner is in a centrally located and easy to find spot. I got to pop in the other day for a peek! As I entered the shop (first level) I discovered that the first floor is primarily Women’s clothing and accessories, with children’s clothing being located upstairs. I didn’t see much for men in the shop, though if you head to the Marketplace Co-Op, Twenty Eight and Main is an excellent spot for the gents.
One of my favorite things about this store that I noticed instantly is how well the shop is organized by style and color! There’s a large selection dedicated to the classic Minnie colors of Red, Black, and White and even a spot just for Mickey:

Throughout the first level, there are various princess tops, mugs, gorgeous jewelry, and super cute handbags! There’s even a little section where you can pick a snack to purchase, because we all know shopping is hard work!
I particularly love the wall of hats, complete with mirrors so you can see which hat suits you best! Tooti recently surprised me with the light yellow Belle hat, which has a rose on the front and says “Tale as old as time” on the back! It’s so pretty!
Rose gold fans: They do carry rose gold ears at this location, but when they have them, pounce fast – they go quickly!
Up the stairs we go to find a whole world for the kiddos, including clothing, toys, and even some jewelry for the kids and grownups alike!
With walls adorned with phrases like “Be Brave” and “Dream Big,” it’s easy to find inspiration for your little one’s next adventure up here!
Featuring princess dresses and even a few items for the little princes, one of my favorite things to see carried here is some of the Our Universe line from Her Universe! They are so cute!
I can’t get over how cute the décor is in here too! How adorable are these walls?

The super fun and interactive Green Army Men at Hollywood Studios are about to receive an update ahead of the opening of Toy Story Land. WDWMagic.com is reporting, that all of the Green Army Men will be now be considered “face characters.” This means that the green mask covering their face will be removed and their faces will most likely be painted green instead. Sarge, the leader of the Green Army Men, already has this look.
Testing is currently underway backstage on the new updated look. We can expect the updated look to make its premiere by the time Toy Story Land opens at Hollywood Studios on June 30.

Atlanta Braves Spring Training games are officially underway at the ESPN Wide World of Sports Complex in Disney World! Recently, Disney Sports caught up with Atlanta Braves All-Star center fielder Ender Inciarte during a break from off-season workouts to gauge his outlook on the 2018 MLB Season.
Inciarte and the rest of his Braves teammates concluded their first full-squad spring training workout of the season on Feb. 19. The speedy Inciarte is cautiously optimistic about his team’s chances in 2018 and hopes the season ends with Atlanta’s first trip to MLB’s postseason since 2013.
DS: You are a Major League All-Star center fielder who trains here at ESPN Wide World of Sports Complex with a bunch of NFL prospects preparing for the NFL Scouting Combine and the NFL Draft. Why are you here?
EI: “The first thing I did last year when I was getting ready for the season was work on my body to get stronger. I have a really good relationship with a lot of Major League Baseball players, and I started talking with Carlos Gonzalez. He told me to come here [ESPN Wide World of Sports Complex] and try the workouts with Coach Shaw for a couple of weeks. He told me that if I liked it, I should stay until the end of the sessions. When I got here, we worked really hard in the weight room, but then we started doing lots of conditioning work outside on the football fields and on the track. It didn’t take long for me to realize that this was exactly the kind offseason training I needed to be participating in.”
DS: Obviously, coach Shaw’s program paid immediate dividends. You won your second National League Gold Glove award, had a career-best 201 hits and earned a spot on the 2017 National League All-Star team.
EI: “That’s what I want to keep doing. I don’t want to be a guy who takes two steps forward and one step back. I want to keep getting better and know the work we put in here with coach Shaw at the sports complex helped me tremendously last year, so that’s why I train here.”
DS: The Braves play in the rugged National League East. How realistic is it for you guys to be competitive in your division this season?
EI: “I think we have a really good shot to win a lot of games against our division opponents and win the division. At the end of year, we played a lot of games against division opponents, and we won a lot of those games, so I think we can challenge the Nationals for the NL East crown in 2018. We’ve got a good shot, but the bottom line is that we’ve got to go out there and prove it.”
DS: As a professional athlete, you’ve worked with a number of professional trainers. What’s different about coach Shaw’s program?
EI: “I like the combination of all of the speed, core, strength and conditioning work that coach Shaw incorporates within his program. You can work hard in the weight room, you can work hard on your core. You can stretch a lot, and for a guy like me, I rely a lot on my speed. I’ve got to be fast as a center fielder, and I know what I’ve been doing here is working. I’m stronger. I feel better than I’ve ever felt during this point of the offseason, and I’ve never felt this fast at this point of the offseason, so the goal is to keep doing what I’ve been doing and stay healthy.”
DS: What’s the prognosis for the Braves this season?
EI: “Our new GM [Alex Anthopoulos] has been very aggressive. He wants to put this team in position to win games. I feel we’ve been in a rebuild mode for the past three years and now, you can see some of the moves we made start to come together. We’ve got a lot of young players, but we have a lot of talent, too. We’ve got a lot of good players coming up and we’ve got a lot of good players on the team, too. We all believe that this year is going to be a lot better, and hopefully, we will be able to surprise a lot of people.”

During a recent visit to the Contemporary Resort we discovered the refreshing Orange Creamsicle Cupcake at Contempo Cafe. Consisting of a Vanilla Cupcake base, filled with Guava Cream filling, topped with Vanilla icing, Orange Crispy Pearls and an orange/white chocolate round means you cannot go wrong with this sweet snack choice.
This cupcake reminds me of my favorite childhood Summertime Treat; the Creamsicle! The Guava Cream in the middle actually gives this luscious cupcake some added flavor enhancement as well. Disney made wishes come true when they served up a helping of peanut dipping sauce to a 14-year old girl.
In 2012, Winter and her family were on a family vacation where they enjoyed a meal at ‘Ohana in Disney’s Polynesian Village Resort. Chef Jeff Moore came to the tableside to discuss various dietary needs with Winter, never knowing he was about to change her life. This experience set her on a path of discovering her love for the culinary arts.
As a Make A Wish Foundation recipient, Winter wished for a return trip to Disney World and the opportunity to cook alongside Chef Jeff. With her wish granted, Winter returned to the Polynesian and was able to whip up a serving of spring rolls and peanut dipping sauce alongside her favorite sous chef. Here is a special video commemorating the experience.
The peanut dipping sauce Winter created for her dish is well-known amongst ‘Ohana fans. It is often served with Pork Dumplings and Honey-Corriander Wings and used to season many of the restaurants’ skewered meats. Join in on the experience by making some of your own peanut dipping sauce at home.
Peanut Sauce from Disney’s Polynesian Village Resort
Ingredients
2/3 cup peanut butter
1/2 cup plus 2 tablespoons soy sauce
1/2 cup sugar
3 cloves garlic
1 1/2 teaspoons minced ginger
1/4 cup diced Spanish onion
1/4 cup chopped peanuts
1 1/2 tablespoons sesame seeds
2 tablespoons sesame oil
2 tablespoons hot chili sauce
1/4 cup plus 1 tablespoon lime juice
1/4 cup plus 1 tablespoon rice wine vinegar
Instructions
Add all ingredients in food processor and pulse until smooth. Store in an airtight container in the refrigerator. Bring to room temp to serve.

Chocolate-Drizzled Pineapple Skewers
Ingredients:
20 chunks fresh pineapple
1 cup chocolate melts, such as Ghirardelli
1/4 cup shaved sweetened coconut
1/4 cup macadamia nuts, finely chopped
2 tablespoons sprinkles
Directions:
Place 5 pineapple chunks onto each of the 4 skewers
Pat dry pineapples with a paper towel to reduce some of the liquid
Melt chocolate melts in microwave according to package directions until melted and smooth
Drizzle chocolate over tops of each skewer and sprinkle with coconut, macadamia nuts and sprinkles
Serve room temperature
Pop popcorn according to package directions and place into a large bowl
Let cool for 5 minutes
Add macadamia nuts, pineapple chunks, coconut and chocolate
Toss to combine
Serve room temperature
Makes 4-6 servings

Grab your chef hat and apron, we have been gifted with the Lobster Nachos recipe that will be served at the Lamplight Lounge. With the opening of the lounge on the horizon, the fate of the Cove Bar’s famous Lobster Nachos has been up in the air. Disney has announced, much to our relief, that the fan-favorite will remain on the menu.
Lamplight Lounge will be opening as part of the reimagined Pixar Pier. Serving “California Gastro Pub” cuisine in a seaside lounge, Lamplight Lounge will be an elegant yet fun place for the whole family.
This new location will be strewn with decor and remnants from Pixar concept artists who “frequent” the lounge. Collectibles, toys, concept art and sketches will leave guests feeling like they’re sitting in the seat of a Pixar genius.
The opening of Pixar Pier and Lamplight Lounge is set for June 23rd at Disney’s California Adventure. However, if you can’t stand the wait, you can now whip up a batch in your own kitchen with the Lobster Nachos recipe.
LOBSTER STOCK
Shells from 5 medium lobster tails
1 medium carrot, chopped
1 small celery rib, chopped
1 small onion, chopped
2 large garlic cloves, quartered
1 teaspoon canola oil
1/2 cup dry white wine
8 cups cold water
1 bay leaf
1/4 bunch parsley (stems only)
1 pinch red pepper flakes
TORTILLA CHIPS
3 cups canola oil (for frying)
48 (4 dozen) 6” corn tortillas
Salt in shaker
SEASONED BLACK BEANS
1 15-ounce can black beans
1 small bunch cilantro chopped
1 teaspoon ground cumin
1/2 teaspoon kosher salt
PICO DE GALLO
5 Roma tomatoes, diced
1/2 medium red onion, diced
1/2 bunch cilantro tops, chopped
1 teaspoon salt
1 1/2 tablespoons lime juice
1 serrano pepper, seeds removed, finely minced
SHREDDED CHEESE
1/2 pound cheddar cheese
1/2 pound Monterey jack cheese
ROASTED GARLIC
2 large garlic cloves
Canola oil (to cover)
CHIPOTLE CREMA
1 1/2 tablespoons chipotle in adobo sauce
2 roasted garlic cloves
8 ounces sour cream
3 tablespoons manufacturing cream
1 pinch ground cumin
1 pinch ground black pepper
1/2 teaspoon salt
LOBSTER CHEESE SAUCE
3 Polanco chiles, roughly chopped
1 teaspoon canola oil, divided
3 large garlic cloves
1 shallot, roughly chopped
1/4 stick butter
2 1/2 tablespoons flour
2 cups manufacturing cream
1 cup reduced lobster stock
4 ounces Oaxaca cheese, grated
2 cups grated sharp cheddar cheese
COOKED LOBSTER
4 tablespoons butter
5 medium lobster tails (meat only)
1/2 teaspoon coarse salt
1 pinch black pepper
1 lime, juiced and zested (1 tablespoon juice and pinch of zest)
FOR LOBSTER STOCK:
Preheat oven to 350°F.
Place lobster shells, carrot, celery, onion, and garlic on baking sheet with lip; coat with canola oil.
Bake for 35 minutes until lightly browned.
Carefully remove from oven and deglaze baking sheet with white wine.
Add baking sheet ingredients with liquid to large stockpot.
Add water, bay leaf, parsley, and red pepper flakes.
Bring lobster stock to boil over medium-high heat, then lower to medium low heat.
Let stock cook slowly until stock reduces by half, 60 to 80 minutes.
Carefully strain stock, reserving 1 cup for lobster cheese sauce.
Set aside. (May be made 2 days in advance, cover and refrigerate.)
FOR TORTILLA CHIPS:
Preheat frying oil to 350°F.
While oil is heating, cut tortillas into 6 pie-shaped pieces.
Once oil is hot, add tortillas in small batches for 2 to 4 minutes (frying times will vary).
Remove from fryer once chips are lightly browned, lightly season with salt.
Continue until all tortillas are fried and salted.
Set aside. (May be made 2 days in advance; store in sealed plastic bag.)
FOR SEASONED BLACK BEANS:
Rinse beans in colander until water runs clear.
Place beans in medium mixing bowl, mix in remaining ingredients until just combined.
Set aside. (May be made 2 days in advance; cover and refrigerate.)
FOR PICO DE GALLO:
Mix all ingredients except serrano pepper in medium bowl.
Add 1/2 serrano pepper, mix and taste; add additional serrano pepper until desired spiciness.
Set aside. (May be made 2 days in advance; cover and refrigerate.)
FOR MIXED CHEESE:
Grate cheddar and Monterey jack cheeses in medium bowl and toss together. Set aside. (May be made 2 days in advance; cover and refrigerate.)
FOR ROASTED GARLIC:
Remove tips from garlic cloves.
Add garlic to small pot and cover with canola oil.
Gently poach garlic on medium-low heat until lightly browned and soft.
Remove garlic and set aside for use in chipotle crema. (Save garlic oil in refrigerator for everyday cooking.)
FOR CHIPOTLE CREMA:
Purée chipotle and roasted garlic in food processor.
Add purée and remaining ingredients to mixing bowl and mix thoroughly.
Pour crema in squeeze bottle or plastic zip bag.
Refrigerate until ready to use. (May be made 2 days in advance; keep refrigerated.)
FOR LOBSTER CHEESE SAUCE:
Preheat oven to 350°F.
Lightly coat Polanco peppers with 1/2 teaspoon canola oil, place on baking sheet; roast for 15 minutes.
Lightly coat shallots and garlic with remaining 1/2 teaspoon canola oil, add to Polanco peppers baking sheet; roast for an additional 25 minutes until caramelized.
Purée caramelized garlic, shallots, and Polanco peppers in food processor until smooth.
Melt butter in large pot over medium heat.
Add flour to make a roux, stirring constantly until smooth and light golden brown, 4 to 5 minutes.
Add cream and bring to boil, stirring constantly; continue to stir and cook for 10 minutes.
Add reserved lobster stock and Polanco pepper purée; bring to simmer, stirring occasionally.
Slowly add Oaxaca and cheddar cheeses.
Stir constantly until all cheese is melted and sauce is smooth.
Set aside; hold warm.
FOR COOKED LOBSTER:
Ensure lobster meat is cleaned and veins removed.
Chop lobster in large bite-size pieces.
Heat butter in large sauté pan over medium heat.
Add lobster pieces, salt, pepper, lime juice, and zest to pan.
Once fully cooked (145F°), remove lobster pieces with a slotted spoon.
Set aside; hold warm.
TO SERVE:
Preheat broiler to 500°F. Spread chips on one large or 2 medium oven-safe plates. (Use a nice baking sheet if you do not have oven safe plates.)
Layer with black beans, lobster cheese sauce, and mixed cheddar/jack cheese, ensuring to cover all chips.
Broil until cheese is melted, watching carefully, 2 to 4 minutes.
Carefully remove plate/sheet, add pico de gallo; top with lobster.
Drizzle chipotle crema and garnish with sliced serrano peppers (optional). Serve immediately.
CHEF’S NOTES: To cut down on preparation time, use restaurant-quality chips, pico de gallo and pre-shredded cheeses. But, if you have time, the homemade chips are the best!

Tours are held Monday through Thursday at 3:30 PM and 5:00 PM, and Friday through Sunday at 1:00 PM, 3:30 PM and 5:00 PM.
