And these Jessie’s Cowgirl Muffins are no exception! They are healthy, delicious and easy to make, just take a look at the recipe:
JESSIE’S COWGIRL MUFFINS
INGREDIENTS:
Muffins
- 1 cup of almond flour
- 1 cup of oat flour
- 1 tsp of baking soda
- 1/2 tsp of baking powder
- 1 tsp of ground cinnamon
- 1/2 tsp of ground ginger
- 1/4 tsp of nutmeg
- 1/2 tsp of kosher salt
- 1/2 cup of unsweetened applesauce
- 1/4 cup of honey
- 3 tbsp of avocado oil
- 3 large eggs
- 2 tsp of almond extract
- 1 1/2 cups of coarsely grated carrots, 1/4 cup will be sued for sprinkling
- Zest of 1 orange
- 1/4 cup of chopped walnuts (optional)
Hat Topping
- 1 small Honeycrisp apple, sliced cross-wise and cored
- 1/2 cup of beet juice
- 1/3 cup of silvered almonds
- 2 tbsp of creamy peanut butter
- 10 raspberries, for hat topping
Additional Items
- Standard (12 cup) muffin pan
- 10 paper liners
- 2 medium mixing bowls
- Large mixing bowl
- Whisk
- Spoon or ice cream scoop
- Cutting board
- Small knife
- Paper towels

INSTRUCTIONS:
For Jessie’s Cowgirl Muffins:
- Preheat oven to 350F and line a muffin pan with paper liners.
- In a medium bowl, whisk together the almond flour, oat flour, baking soda, baking powder, spices, and salt. Kids can help whisk. Set aside.
- In a large bowl, combine the applesauce, honey, oil, eggs, almond extract, 1 1/2 cups grated carrots, orange zest, and walnuts, if desired, and mis until evenly combined. Fold in the dry ingredients and mix just until incorporated.
- Spoon the batter into ten prepared muffin cups all the way to the top. Have children top each muffin with the remaining 1/4 cup of grated carrots.
- Bake for 25 to 2 minutes, until the muffins are golden brown on the edges just barely spring back to the touch. Be careful to not over bake. Let cool.
For Jessie’s Cowgirl Hats:
- Meanwhile, add the beet juice and apple slices to a medium bowl to let stain, about 5 minutes.
- Once the apple slices are bright red, place them on a cutting board, pat dry with a paper towel and then make tiny cuts along the rim of each apple slice. Insert an almond sliver into each slit to resemble the edging on Jessie’s hat.
- Dip the raspberries in a small amount of peanut butter and place onto the center of each hat, peanut butter side down. Kids can do this part.
To serve:
Have kids top each muffin with a cowgirl apple hat and serve immediately.
