Gideon’s Bakehouse Takes Guests on a Cookie Journey for Flavors of Florida in Disney Springs. This summer, join us at Waterview Park for a new culinary series! Learn from the experts at popular Disney Springs dining locations—and get a taste of their fresh, Florida fare.
This week, where we spent our time undercover at The Marketplace in Disney Springs listening to Steve Lewis, the founder, and owner of Gideon’s Bakehouse, told his story and creation of our favorite cookie and shop.
Steve could very well be the most famous baker in the Disney bubble. His cookie creations have almost reached mythical status. Wait times at the Disney Springs location sometimes reach upwards of 3 hours. Also, his trading cards and menus have become valuable collectibles, with Facebook groups dedicated to trading and selling them.
With all that happening, Steve remains humble and grateful for all he has. His story is one of perseverance through failed businesses, and a 15-year journey to create the almost perfect cookie. Steve gave us an inside look at what it took to create the Disney Springs version of Gideon’s Bakehouse and the pride and joy he felt along the way. His story of the Gargoyle, who he said “it is up to you, the individual, to figure out how to pronounce the name of” being placed atop the Bakehouse was enjoyable.
Stave gave some great advice to others, in a way only Steve could “My best advice is not to listen to my advice, or anyone’s advice” Go after your dream, stick with it, you know what you want was the message.
As always, we find Steve to be a little mysterious, enigmatic, smart, funny, and inspiring. We can honestly say, we have gone to Gideon’s at Disney Springs once a month since day 1, which he showed a video of the opening day line which stretched around all of Springs. We love his creations, we collect the cards and menus, we eat every cookie that comes out, and we enjoy his cakes and peanut butter iced coffee.

Beloved Disney Historian Jim Korkis Passes Away at 72
Beloved Disney historian Jim Korkis, age 72, has passed away after battling serious medical issues. Mark Goldhaber, organizer of the GoFundMe to support Korkis’ household and medical bills, shared the sad news.
Friends, I am heartbroken to have to inform you that our friend Jim Korkis passed away this morning. He was unresponsive this morning at the rehab center and was transported to the hospital. His brother Mike was able to arrive a few minutes before Jim passed. While Jim could not respond, Mike said that Jim appeared to be able to hear him, and he was able to talk to Jim for those last few minutes.
Jim had been feeling good this week, and there really was no indication that things would take a turn for the worse. He did not appear to be in pain and went quickly and quietly as he had wished.
There will be a memorial for Jim at a date and time to be determined. It will be held via Zoom so that those elsewhere in the US or overseas can attend. We’ll publicize the details once it’s set, but for now, Mike needs to focus on taking care of the necessary details.
To those of you who contributed to this GoFundMe, THANK YOU! Your contributions and messages of support gave life and light to Jim over these last several weeks. He was astonished to see how many people loved him. The remaining balance will be used to help pay off his final medical bills.
Korkis’ health challenges began after a home accident in February, leading to the discovery of major arterial blockages, necessitating quadruple bypass heart surgery. During recovery, he also contracted COVID-19 and received a devastating diagnosis of stage four inoperable colon cancer, which had spread to his liver.
With a prolific career, Korkis authored numerous articles and books on Disney history, including “The Unofficial Walt Disney World 1971 Companion: Stories of How the World Began” and “The Vault of Walt” series.
A memorial for Jim will be held via Zoom, allowing friends and admirers from across the U.S. and overseas to participate. Further details about the event will be shared once the date and time are determined.

It appears Pickles are the “thing” this year at Epcot’s International Food & Wine Festival presented by Corkcicle. You can get a Pickle Milkshake at the new Muppets Lab at the Odyssey pavilion which may or may not be good. That is up to you! Furthermore, you can get the new Pickle Fries at the Fry Basket.
Pickle Fries are exactly what you think they are, dill spears, coated and deep fried, and served with dill ranch sauce. The crunch is very nice and held up. They did not become soggy. The flavor of the pickle, coating, and dill ranch was pleasant. It was one of the best bites at Food and Wine this year. Plus it was filling and we walked away thinking it may have been the best money spent.
Tour de Turtles: A Celebration of Sea Turtles and Science at Disney’s Vero Beach Resort
The 16th annual Tour de Turtles: a Celebration of Sea Turtles took place yesterday at Disney’s Vero Beach Resort. Researchers from the Sea Turtle Conservancy (STC) and Disney Conservation released two sea turtles as part of the Tour de Turtles “migration marathon.” The turtles were both named after characters in Disney’s frighteningly fun adventure movie, “Haunted Mansion.”
Tour de Turtles is a fun, educational event that follows the migration of sea turtles from their nesting beaches to their feeding grounds and ultimately provides scientific data on how best to protect their species.
The Disney Conservation Fund (DCF) and Disney Cruise Line are each sponsoring a turtle this year, whose names, Madame Leota and Harriet, are the names of characters in Disney’s frighteningly fun adventure movie “Haunted Mansion,” now playing in theaters. Not unlike Gabbie, another character in the film who enlists a motley crew of so-called spiritual experts to help rid their home of supernatural squatters – Tour de Turtles brings together a team of researchers from the STC and Disney Conservation annually to undertake a daunting mission – using satellite telemetry to track two female turtles to determine where and how far they swim during the migration season.
Each turtle swims to raise awareness about various threats to sea turtle survival. The turtle to swim the furthest distance will win the Tour de Turtles race.
“Disney’s commitment to sea turtle conservation in Vero Beach spans 20 years, and we are very proud to have recently watched our 1.5 millionth sea turtle hatchling leave the nest and shuffle its way to the ocean,” said Mark Penning, Vice President of Disney’s Animals, Science and Environment. “Southeast Florida hosts one of the largest nesting aggregations of loggerhead sea turtles, making up to 40 percent of the global loggerhead population. The team has recorded more than 20,000 sea turtle nests on our survey route since the program began.”
The data collected during Tour de Turtles helps researchers, conservationists and governing agencies make more informed decisions about sea turtle conservation and management. Since the launch of the event in 2008, STC and Disney have collaborated to study 29 sea turtles outfitted with satellite transmitters and released from Disney’s Vero Beach Resort. Continuing its commitment to strengthen youth education programs in port communities around the world, Disney Cruise Line proudly supported local students from Club Esteem from Melbourne, Florida, to participate in this year’s event. DCF also has directed more than $5.1 million to support global sea turtle conservation efforts.
“Disney is a fantastic collaborator,” said David Godfrey, STC Executive Director. “Disney’s commitment to conservation, passion for environmental education, and effectiveness at communicating with audiences have made the Tour de Turtles a fun and successful program since it was launched over a decade ago.”
In addition to Tour de Turtles, the Disney Conservation team has dedicated nearly 19,000 hours to studying and monitoring sea turtle nests during the summer nesting season along the five-mile coastline at Disney’s Vero Beach Resort. From approximately May to October, Disney Vacation Club members and resort guests also have the opportunity to assist the team by joining outings to observe real-time sea turtle research while learninghow they can take action to protect sea turtles. So far this year, the Disney Conservation team has a record-breaking number of nests along their survey route –nearly 2,000 by August, well above the average 1,500 normally counted in an entire season.
Tour de Turtles is a research and education program of the Sea Turtle Conservancy and Disney’s support is just one example of bringing Disney Planet Possible to life by taking action to make a happier, healthier planet possible for all.

Get a Closer Look Inside San Fransokyo Square at Disney California Adventure Park
San Fransokyo Square at Disney California Adventure park is getting closer to being finished! The area will feature multicultural food, landmarks inspired by San Franciscan and Japanese icons, and new merchandise. Themed to the iconic city from Walt Disney Animation Studios’ Academy Award-winning film Big Hero 6, the land will officially open on August 31.
Landmarks As the Pacific Wharf area transforms into San Fransokyo Square, several familiar landmarks will remain such as Ghirardelli Soda Fountain and Chocolate Shop, a San Francisco-founded company. A koi fish turbine, which powers San Fransokyo in the film, will be added and new lanterns will be hung outside. On the inside will be an animated mural showing the daily life of San Fransokyo, just as it previously showed scenes from the daily life of San Francisco.
“We are, of course, in the footprint of what would be San Francisco, but San Fransokyo is this alternate and parallel reality,” Walt Disney Imagineering Art Director Michael Dobrzycki said. “So, it makes sense that if there’s a Ghirardelli in our San Francisco, there’s a Ghirardelli in our San Fransokyo as well.”
There will also be several landmarks from the film added to the land, including the 54-foot San Fransokyo Gate Bridge which will be the “gateway” to San Fransokyo, Dobrzycki said.
Once the bridge is crossed, specific San Fransokyo music will be heard. To build the land’s soundtrack, Dobrzycki and his team started with 2014-era J-pop songs—the year the film was released—and a loop of music from the Japan Pavilion in EPCOT. Four songs from The Happy Ride with Baymax at Tokyo Disneyland were also added to the soundtrack, along with contemporary J-pop songs. If you are in the land for 90 minutes, you will hear the whole soundtrack loop.
At night, the “Port of San Fransokyo” sign will be lit up in neon letters, just as it appears at the beginning of the film.
The Port of San Fransokyo Cerveceria will be the new, go-to place for draft beverages and seltzers, so guests can choose from a selection of beers and pair it with the new Garlic Pinwheel Chips Mix.
Hamada Bot Shop is where Hiro Hamada and the Big Hero 6 team improve their hi-tech gear. This is where you will be able to meet Hiro and Baymax!
“We’re actually creating a portico area for Baymax to come out to meet the guests in,” Dobrzycki said.
Near the Hamada Bot Shop, guests will see signage for Good Luck Alley—which in the film is a gambling den where robot makers challenge one another as their robots compete in the evenings. On the other side of the alley, guests will come to the San Fransokyo Maker’s Market.
At the San Fransokyo Maker’s Market, defeated bots are picked apart so makers can build new creations. The San Fransokyo Maker’s Market will be filled with merchandise for guests to choose from.
Merchandise Three pieces of merchandise will debut in the San Fransokyo Maker’s Market the day the land opens, Kimberly Wilson, Integration Manager, Retail Product Optimization for Disneyland Resort, said. These will be a white adult T-shirt featuring a black outline of Baymax, a red children’s T-shirt featuring Baymax covered in red bandages, and a black ball cap featuring Baymax lying down with Mochi the cat lying on his stomach.
Additional merchandise options will include phone cases, AirPod cases, Apple Watch straps, a plush Baymax toy, magnets, and even a shirt featuring Baymax that says “Hugs All Day, Everyday” for the furry friends of guests.
A vending machine will offer four different collectible medallion designs. The images on the medallions include Baymax, wind turbines, the San Fransokyo Gate Bridge, and one that has a combination of Baymax, San Fransokyo’s logo, and two kanjis representing knowledge and courage.
Food
Aunt Cass Café At Aunt Cass Café, the signature Bay Area dish, clam chowder in a bread bowl, will have miso added to it, giving it a subtle umami flavor, Chef Jeremiah Balogh, Culinary Director of Disney California Adventure, Candy Production, Park Banquets, and Festivals, said. Bread bowls will also serve up curry with rice, green onion, and pickled ginger.
“Boudin Bakery is still part of our San Fransokyo story, and so you’re going to continue to see some of those amazing flavors of that sourdough bread that we all enjoy,” Balogh said.
For a refreshing meal, the Soba Noodle Salad is a great light dish with tofu, cabbage, edamame, carrots, roasted corn, scallions, and cilantro topped with crispy shallots and sesame ginger dressing. It can be paired with a refreshing Honey Lemon-Ade with yuzu purée and popping passion fruit and strawberry boba.
In the series, Baymax enjoys a cold beverage with caramel syrup, and guests will be able to experience this movie moment with their own Caramel Cream Cold Brew—perhaps the perfect pick-me-up.
Aunt Cass has thought of everything, even dessert. Guests can enjoy a fluffy Japanese-style cheesecake with a cherry compote. Made with a meringue, it is much less dense than a typical New York cheesecake, Balogh said.
Lucky Fortune Cookery Next door to Aunt Cass Café is Lucky Fortune Cookery, which has a multicultural menu of Vietnamese, Korean, Chinese, and Japanese flavors, Balogh said. A Yaki Udon will be available, which is similar to Yakitori but served with thick udon noodles.
A Karaage-inspired Crispy Chicken Sandwich with slaw and Togarashi mayonnaise will also be available on a potato bun, along with garlic chips.
Inspired by Cocina Cucamonga Mexican Grill’s braised beef, there will also be a twist on ramen that includes birria beef, mozzarella cheese, a soft-boiled egg, and roasted corn.
Balogh sees a narrative in the mixing of cultures together in the food he and his team have created for San Fransokyo Square. “I think about these cultures kind of coming together, sharing ideas and thoughts and ingredients, maybe techniques,” he said. “And then as they go back to their restaurants, they’re practicing some of those things that they’re learning into their own menus.”
Wash all these flavorful foods down with an unsweetened black iced tea infused with flavor from lychee syrup and lychee coconut jelly.
And, of course, there’s a Baymax-themed dessert! A white macaron filled with a buttercream and a hazelnut filling is topped with an outline of Baymax’s eyes.
Cocina Cucamonga Mexican Grill While Lucky Fortune Cookery borrows influences from Cocina Cucamonga, Cocina Cucamonga borrows from Lucky Fortune Cookery by adding a Japanese flair to its Mexican street corn. The corn will be topped with Togarashi mayonnaise, queso fresco, furikake, and bonito flakes, which will be served with wheat chicharrons.
“What we’ve recognized is [the restaurants] want to welcome their new neighbors into the neighborhood,” Balogh said. “On the taste side of things, your taste buds are wondering, ‘Where am I right now?’ And I think that’s really exciting.”
Rita’s Turbine Blenders Jelly rings will be put on top of non-alcoholic drinks at Rita’s Turbine Blenders as a nod to GoGo Tomago.
Food for Children As Chef Balogh has observed during his several years at Disney, children enjoy eating what the adults around them are eating. Some restaurants do have a kids menu but the items in the kids menu will typically be smaller portions.

Marvel’s Secret Invasion Finale is Lowest-Rated Episode Ever
The much maligned Secret Invasion, Marvel’s latest show on Disney+ has hit an a new low. Production on the latest MCU series costs the studio over 200 million to produce, and has cratered in it’s online ratings. The season finale of Secret Invasion earned the lowest aggregate in the history of any MCU television project. While it is only ten reviews, as of now, “Home” has a 10% rating on the television and film site Rotten Tomatoes.d
The series earned a 56% score overall and a 59% audience score. These low rankings should be a concern for Kevin Feige and Disney CEO Bob Iger. Iger recently commented on CNBC that Marvel and Star Wars will start pulling back on Marvel and Star Wars by creating less content. Iger stated, “not only did they [Marvel] increase their movie output, but they ended up making a number of TV series…Frankly, it diluted focus and attention.”
