What’s New on Signature Menus at Walt Disney World

In the Magic Kingdom, Cinderella’s Royal Table has added a lunch Niçoise Salad with seared tuna, haricot verts, olives, tomatoes, baby greens and classic vinaigrette. For dinner, an indulgent whole-fried Cornish hen with castle-made mac ‘n cheese and broccolini is getting rave reviews.

Cítricos at Disney’s Grand Floridian Resort & Spa is featuring a simply delicious taste of spring with a pear and endive salad tossed with pear emulsion, pistachio brittle, Robiola Bosina cheese and fresh strawberries.

What’s New on Signature Menus at Walt Disney World

Also at the Grand, Narcoossee’s offers a whole snapper with basmati rice, charred green beans and soy-lime vinaigrette. If you remember this from the menu, it’s run before as a special, but is so popular it’s now a seasonal staple.

Jumping over to Yachtsman Steakhouse at Disney’s Yacht Club Resort, we had a hard time choosing between the house-made charcuterie with smoked duck sausage, venison, veal sweetbread terrine and steak tartare and the butter-poached lobster with vanilla-whipped parsnips and a tart green apple emulsion. That lobster is cooked sous vide (French for “under vacuum”), which keeps it deliciously tender.

Across the water at Disney’s BoardWalk, Flying Fish Cafe keeps it local and sustainable with Floribbean wild-caught shrimp cocktail with Vero Beach red watercress, spiced heirloom radishes and palm hearts with a horseradish and piquillo-pepper-laced cocktail sauce.

At California Grill at Disney’s Contemporary Resort, it’s all about spring veggies – spring onions on the flatbreads and in soups, English peas, artichokes in the ravioli, Delta asparagus with the beef filet, Florida peaches to “lacquer” the buttery pork belly served with a white bean puree – or have your peaches for dessert with crepes and peach sorbet. Yum.

Artist Point at Disney’s Wilderness Lodge Resort takes the prize for sweet endings with its “Chocolate Indulgence” – Valhrona chocolate ganache with salted chocolate ice cream, Amarena cherries and chocolate “pop rocks.” Eat dessert first, we say!

I love reading old articles and transcripts from interviews with Walt or Lillian Disney about their family life. They had a love for each other that is refreshing to read about. In one of my favorite articles, which was printed in McCall’s magazine in February, 1953, Mrs. Disney talked openly, honestly and with a great sense of humor about the relationship between she and Walt.

In the article she says, “My husband deals in myths. One of the myths which surrounds him, and which he takes great pains to perpetuate, is that he is Mickey Mouse at heart – shy, gullible, henpecked. Walt is always telling people how henpecked he is.”

She goes on to talk about instances where the females in the home (their daughters, Diane and Sharon, and herself) would, at times, try to ‘persuade’ Walt into doing or not doing something. But no matter how much they may have squealed, he was no mouse, he went ahead and did what he wanted to do. A specific story she talked about was Walt’s miniature train which he built and dearly loved. She said she supported his love for the train and she felt like the hobby was good for him as he had a lot of stress. She said that having the train calmed him and he really enjoyed playing with it and giving people rides when they would come around. To her, personally, it was fun to ride for a while but it was kind of dirty.

She talked about an instance in which they were having their brand new home built and Walt wanted to run the track for his miniature train, the Lilly Belle, all over the grounds. The girls in the family had other ideas for the yard, and Lillian also felt that it was a bad idea for a couple of reasons: having all the track laid was going to be very costly, and it would make it harder to sell the house once the girls grew up and they no longer needed such a big house. “So”, she said, “the girls and I, using our best female wiles, tried to persuade Father to keep his train at the studio, where he could play with it at noon and run it all over the lot to entertain visiting firemen.” She said Walt didn’t say much to them when they brought up the idea but then one night, when they were finalizing the plans for the new house, Walt came in with a document. “Walt said, sign or no house”, Lillian stated. She continued, “it was a full legal document he had his lawyers draw up, a right-of-way contract for his railroad through the property, a contract exactly like those used by regular commercial lines. It had taken hours to do, and was so technical we couldn’t wade through it. Pretty soon all three Disney females caught on that we were beaten and might as well laugh about it. We were quite prepared to put our names on the dotted line when Walt picked up the contract and said he’d trust us.” Henpecked indeed!

She spoke of floods that came the next Spring which washed part of the track away. After that, Walt  had the entire bank rebuilt with new drains. She said,”One Saturday I was picking raspberries, the girls were up at the swimming pool with their friends, and Walt was supervising the laying of the new track. Finally, he approached me with a glum face.” He said, “I’m going to get rid of the train if nobody cares about it anymore.” Then she continued, “There is only one thing Mrs. Walt Disney can do at a moment like that. She forgets the berries and goes over to admire the pretty, expensive new drains. Poor henpecked Father!”

I laugh every time I read it because I can see it happening. He was so much like my father, but being born a couple of decades later, my mother was not so accommodating. She would have gone out to see it, after she was finished picking the berries.

Lillian said in the article, “I wouldn’t have missed one minute of the twenty-seven years I have been married to Walt Disney.” Those twenty-seven years would finally turn into thirty-nine years before Walt passed on. Walt is said to have been the most devoted of husbands. When other Hollywood Studios had bad press about the scandalous activities of the studio heads, the Disney Studios never did.

Walt loved his family.  He loved his wife and he loved his daughters; but he was seemingly nowhere near henpecked.

Disney gets Tangled w/ Locks of Love - You don't need 70 feet of hair to be a hero!In celebration of the DVD/Blu-ray release of TANGLED on March 29, a highly visual charity event in association with The Buzz Girls took place at the Bungalow Salon, a “celebrity favorite” in West Hollywood. The event benefited esteemed charity Locks of Love, which provides hair pieces to financially disadvantaged children suffering from long term medical hair loss. Several celebrity hair-stylists offered up complimentary haircuts to those who wished to donate their hair (or money) to Locks of Love.
A larger-than-life Rapunzel braid hung from a Tangled tower replica, and acted as a “hair-length thermometer”, demonstrating the cumulative length of hair cut in each hour, when combined end to end.

Brave is set in the mystical Scottish Highlands, where Merida is the princess of a kingdom ruled by King Fergus and Queen Elinor . An unruly daughter and an accomplished archer, Merida one day defies a sacred custom of the land and inadvertently brings turmoil to the kingdom.

In an attempt to set things right, Merida seeks out an eccentric old Wise Woman and is granted an ill-fated wish. Also figuring into Merida’s quest — and serving as comic relief — are the kingdom’s three lords: the enormous Lord MacGuffin, the surly Lord Macintosh, and the disagreeable Lord Dingwall.

Brave (previously titled The Bear and the Bow) is an upcoming American computer-animated 3-D film. It is being produced by Pixar and will be distributed by Walt Disney Pictures. It is directed by Mark Andrews and Brenda Chapman.

The film is scheduled for release on June 22, 2012.

  • Luna Park Pool Slide (BoardWalk Resort) closed through 3/16/11 for refurbishment. Guests may use the pool or use the feature pool and slide at the Yacht & Beach Club Resort.
  • Friendship Boats to Epcot, Hollywood Studios and resorts in the area (Yacht Club Resort) closed through 3/24/11. Guests can use the resort bus transportation to Hollywood Studios.
  • Blizzard Beach closed through 3/26/11 for annual refurbishment.
  • Magnolia Bend Leisure Pool (Port Orleans Resort – Riverside) closed through 4/1/11 for refurbishment. Ol’ Man Island feature pool and all other pools will be open during this time.
  • Leisure Pool (Polynesian Resort) closed through 4/8/11 for refurbishment. The Nanea Volcano Pool will be open during this time.

Are you all tired of winter? I know everyone here at Chip and Company is and we are happy that the real Spring (not the official date) is right around the corner. Our relentless news hounds and terrific writers have all been busy this week so it’s time for me to get busy and give you a roundup of some of the best stuff.

  • This one is hard to believe but Disney’s Fairytale Weddings and Honeymoons is twenty years old. Disney’s Fairy Tale Weddings Celebrates Milestone of “Happily Ever Afters’ at Walt Disney World Resort tells us all about their plans, programs and goodies to celebrate the anniversary.
  • In a related story, you can find out the specifics about Fairy Tale Weddings aboard the Disney Cruise Line. Check out Couples Cruise To A Happily-Ever-After With Disney’s Fairy Tale Weddings And Honeymoons On Disney Cruise Line.
  • Disneynature will be releasing a new movie on Earth Day this year. The movie, African Cats, opens Earth Day 2011. You can learn the details and see the movie trailer by going here.
  • It looks like the Disney Gift Card Team is getting in to the celebration of the 40th Anniversary by introducing the 40th Anniversary Disney Gift Cards. Maybe we’ll learn a bit more about what the rest of the Disney Teams have in store for us this year down the road!!
  • Walt Disney World has become known over the years for its outstanding array of dining opportunities. But – watch out WDW, the Disneyland Resort is starting to sneak up on you. The resort’s Executive Pastry Chef won top honors at the Southern California Restaurant Writers Awards this past weekend. That’s not all folks, read about the host of awards that good old Disneyland picked up at the same ceremony. Congrats Disneyland and Chef Jean-Marc Viallet!!
  • In a couple of Merchandise related articles (this is Disney we’re talking about after all) the folks at Disney Consumer Products will be introducing healthier more family friendly products and, you knew it would be coming, the 40th Anniversary Merchandise is starting to be introduced into the parks.
  • In its ongoing efforts to inspire a desire for excellence in our young people, each year Walt Disney World hosts a program that you can read about here called The Disney Honors.
  • Disney Online has introduced a new series called ‘Destination Disney”. Appropriately enough, a Bob Iger interview kicks off the new ‘Destination Disney’ Series. Give the interview a look!
  • Here comes Disneyland Resort again!! They have introduced a new pirate experience and they ask you the question – Want To Play Pirate? We’ll Help You Dress The Part At Disneyland Park. Check it out and see what’s in store for you.
  • Disney has just made available a three minute preview of Ashley Tisdale’s new movie. You can check out the preview at Disney Proudly Unveils A Full three Minute Sneak Peek Of Its All New Movie Starring Ashley Tisdale.
  • Now that Mickey’s vacation home (his full time residence is actually at Disneyland) is history, we are learning a lot more about where you will be able to meet and greet The Big Cheese!!! If you read Magician Mickey to Greet Guests at Town Square Theater at Magic Kingdom Park you can get all of the latest details.
  • There is a group of folks out there who work above and beyond in the education of our kids. Show them how much you care by reading Time Is Running Out – Downtown Disney Area Hotels To Honor Teachers In 3rd Annual Contest. You only have until April 15th to take action so please hurry!!!

That’s the news for this week but we can’t finish without giving you some of the views of our wonderful staff of Chip and Company writers. They are an extremely diverse group and have a wide ranging arena of interests and thoughts so here we go.

  • We are not just a pretty face here at Chip and Company, we can also be useful and answer some of the questions that puzzle you. This week we had someone Ask A Disney Question when she inquired about Adding the Dining Plan When You Have An Annual Pass. Chris was able to provide her with the information she needed.
  • Brenda loves Walt Disney World and visits quite often. But – she still has one dream she has yet to fulfill. If you read My Suite Dream you can find out what it is (I bet you already have an idea though).
  • In a time when common courtesy seems to have gone out the window, Jennifer gives us her thoughts and common sense ideas about courtesy on the Disney Bus system. Check out Disney Transportation – Giving Up Your Seat and give it a thought next time you are on a crowded Walt Disney World bus.
