Pumpkin Beignets

1/4 cup warm water (105º)
4 cups all-purpose flour
1 cup canned pumpkin puree
1/4 cup sugar
1/4 cup heavy cream
1/4 cup hot water
1 egg
2 tablespoons vegetable shortening
1/2 teaspoon salt
Vegetable oil, for frying

Maple Glaze
3 tablespoons butter

1 cup powdered sugar

For Pumpkin Beignets:

  • Sprinkle yeast over warm water in a small bowl, stirring to dissolve. Let stand for 5 minutes.
  • Combine flour, pumpkin puree, sugar, heavy cream, hot water, egg, shortening, and salt in a large bowl; stir in yeast mixture. Mix dough just until combined and smooth. Let dough rest in bowl, covered with a clean kitchen towel, 30 minutes.
  • Transfer dough to a well-floured surface. Pat to about 1/4-inch thickness and cut into 2-inch squares. Cover with a clean kitchen towel and let dough rise in a warm, draft-free area, about 1 to 1 1/2 hours.
  • Heat 3 inches of vegetable oil to 350°F in a deep, heavy pot over medium-high heat. Fry beignets until golden brown, about 2 to 3 minutes, turning as soon as they brown on one side.
  • Remove with tongs or a slotted spoon and place on paper towels to drain.

For maple glaze:

  • Combine butter and maple syrup in a medium microwave-safe bowl. Microwave until butter melts. Whisk in powdered sugar until smooth.
  • Drizzle warm beignets with maple glaze and serve immediately.

A few hundred guests had to be evacuated today as a Walt Disney World monorail broke down between the Contemporary Resort and the Magic Kingdom. Reedy Creek Fire & Rescue was called out Saturday around 5pm to respond to the stuck monorail. Guests were stuck for almost 2 hours while emergency crews evacuated guests.

There were no injuries reported and the cause of the breakdown looks to be a mechanical problem. Normal monorail operation resumed after the broken down monorail was towed back to the garage for service.

Stay tuned for more breaking news from Chip and Co.

Update: The monorail stopped around 3:30 p.m. according to passengers.

The second and third cars had to be evacuated by the cherry picker truck because some passengers had medical issues. The other passengers remained on the monorail and were towed back to the Transportation and Ticket Center and evacuated there. Disney cast members were waiting for them with water and ice and anything they needed.

New Southern Cuisine Restaurant with Celebrity Chef Art Smith opening at Disney Springs

Disney springs map
Disney springs map

Celebrity Chef Art Smith is bringing a taste of real Florida to a new restaurant opening in summer 2016 at Disney Springs at Walt Disney World Resort.

Homecoming: Florida Kitchen and Southern Shine will showcase the cuisine of Chef Smith, who was born and reared in the town of Jasper, Fla., on the Florida-Georgia border. After 25 years of preparing award-winning meals for celebrities and heads of state and appearing on television, he is making Florida his home once again.

With farm-to-fork cuisine that showcases the bounty of Florida, and design inspired by turn-of-the century Florida architecture of the late 1800s, Homecoming will feature traditional Southern favorites with sophisticated, chef-inspired creations. The 6,000-square-foot, 200-seat restaurant “is where Florida heritage meets New Southern cuisine,” explains Smith.

“I couldn’t be happier about coming back to Florida and Walt Disney World Resort,” he continues. “To be able to prepare the food I love in the place where I have so many special memories is a dream come true.” Smith is a sixth generation Floridian, and his family still raises cattle, pecans and heirloom vegetables on their ancestral farm.

Smith says he is especially pleased with the restaurant’s Disney Springs connection, as he recalls summertime gatherings at the springs in the Northern part of Florida, casual get-togethers known as “homecomings” when family and friends gathered to share Southern specialties, enjoy homemade desserts and maybe sip a hand-crafted cocktail under the shade of live oak trees.

“Once we heard the story of his passion for Florida and his vision for the restaurant, we knew that it was a perfect match” said George Kalogridis, president of Walt Disney World Resort. “We’re thrilled to welcome Chef Art back to the state and share his spirit of Homecoming with our guests from around the world.”

Homecoming Cuisine

“The menu is a big part of my ongoing homage to Florida’s bygone era,” explains Smith.  “We will proudly and prominently support the Fresh from Florida campaign and the vast majority of our seafood, produce, poultry and beef will be from local farms, ranches or fisheries.”

The “rustic-chic” restaurant has a glass-walled show kitchen and the Southern Shinebar that celebrates an era where characters might have created some homegrown spirits on their homesteads just beyond the springs.  The bar will feature whimsical cocktails, punches and coolers, including some made with now-legal variations of moonshine.

Smith’s expertise is all over the menu from Southern favorites like homemade pimento cheese, Church Lady deviled eggs, low country shrimp and grits, kale salad with Sweet Grass Dairy cheese and spiced pecans and a grilled Blackstrap pork chop with sawmill gravy. “Each dish has a little Florida twist and makes guests feel like they’re on the back porch with me for every meal,” says Smith.

Desserts will be a specialty, with cakes, pies and delectable sweets made daily and shipped from a bakery in Hamilton County, including the restaurant’s signature Mockingbird Cake. “Southern women, using delicious ingredients and love, are the world’s best bakers,” explains Art.

Disney Springs is a one-of-a-kind Disney experience, treating guests by day and night to great dining, shopping and entertainment amid beautiful open-air promenades, flowing springs and waterfront charm. With an air of sophisticated grace and design that harkens to Florida’s waterfront towns at the turn-of-the-century, Disney Springs is home to four distinct, outdoor neighborhoods opening in phases: The Landing, Town Center, Marketplace and West Side. When fully completed in 2016, Disney Springs will double the number of shopping, dining and entertainment venues – from the current 70 to approximately 150.

Disney Springs is part of the Walt Disney World Resort, the number one family vacation destination in the world, located in Lake Buena Vista, Florida.

Chef Art Smith Biography

Charles Arthur “Art” Smith, age 55, is an American chef who worked for former Florida governors Bob Graham and Jeb Bush and, until 2007, was personal chef to Oprah Winfrey. His expertise is Southern American cooking. While attending Florida State University, he completed culinary internships with The Greenbrier in West Virginia and the Walt Disney World College Program.

A James Beard Award recipient for his New York Times best-seller list cookbook Back to the Table: The Reunion of Food and Family, Smith has also authored Kitchen Life: Real Food for Real Families; and Back to the Family. His latest cookbook, Art Smith’s Healthy Comfort, has a focus on healthy cooking and healthy living.

Smith has made regular television appearances on programs such asIron Chef America,” “The Today Show,” “Nightline,” “Fox News,” “Extra,” “BBQ Pitmasters,” “Dr. Oz,” “Oprah,” “Top Chef” and “Top Chef Masters.”

Smith founded the non-profit charity Common Threads, which focuses on teaching children about different cultures through food and art. Common Threads has served thousands of healthy meals to children around the world since 2006, and in 2007 he received the Humanitarian of the Year award from the James Beard Foundation.

With Smith moving his family back to Florida, he founded Reunion, a non-profit charity that focuses on community renewal projects as well as teaching Southern tradition from the garden to the kitchen at Chef Art Smith’s Florida Garden and Kitchen School.

Smith is executive chef and co-owner of the highly successful restaurants Table Fifty-Two in Chicago, Southern Art and Bourbon Bar in Atlanta and Art and Soul in Washington, D.C.

College Students Raise Money to Send Coffee Shop Employee to Disney World

Disney magic

Magic is happening for Kathryn Thompson, a grandmother who works the night shift in a North Carolina Elon University campus cafe.  Two college students, Lucy Smith-Williams and Taylor Zisholtz, raised $7,000 to send her and her family to Disney World.

It all started when Kathryn Thompson started a conversation with Lucy and Taylor. Kathryn had learned that Lucy was from Florida. After hearing this Kathryn had said that a trip to Disney is on her bucket list but she never thought she would be able to go due to the price of such an amazing vacation.

The 2 students were determined to make her dream a reality and they started a GoFundMe page and their original goal was $6,500, well they passed that! This included a $1,000 donation from a GoFundMe employee.

“I think once we got talking with her, you could see how passionate and even just in the few seconds, you could see how warm she was,” Zisholtz told the campus news website, The Pendulum.

“In a world where everybody is so cold, they keep their wishes and their feelings all to themselves. With Kathryn it was just an open door, she welcomes everyone, in and she works so hard.”

The 2 students told her the amazing news before her shift on Monday. Needless to say she was in complete shock when she heard the news.

Check it out:

So far she has not planned her magical vacation yet. She plans to take her son and daughter in law and her 2 grandsons.
