If you’re craving something tropical, look no further than the Fish in Coconut dish at The Cowfish Sushi Burger Bar. Created by Chef Dania Alvarez-King, this dish is a fusion of her Dominican roots and Asian flavors, featuring Japanese hamachi fillet, sweet coconut rice, coconut gochujang sauce, and pickled brassica salad. Chef Dania channeled childhood memories of coconut-infused seafood dishes into this creation, blending sweet and spicy flavors for a dish that’s both comforting and exciting.
A Carbonara That Tells a Story at VIVO Italian Kitchen
At VIVO Italian Kitchen, Chef Alexis DeMoss is taking guests on a culinary journey with her DeMoss Carbonara—a rich and creamy spaghetti dish with pecorino cheese, parmesan-pancetta cream sauce, a poached egg, and fresh herbs. Carbonara was one of the first dishes Chef Alexis learned to make as a young cook, and perfecting it over the years has been a testament to her dedication to the craft. Seeing her name attached to this dish for Women’s Herstory Month was a proud moment, and now guests get to experience her signature creation firsthand!

Inspired by the Old Cuban, a cocktail made famous by Audrey Saunders, this drink blends rum, lime juice, blueberry concentrate, simple syrup, prosecco, and a mint garnish. A Bold Take on Irish and Latin Cuisine at Finnegan’s
If you’re looking for a satisfying meal inside Universal Studios Florida, head to Finnegan’s Bar & Grill, where Chef Ross Sequera Torres is fusing her Latino heritage with Irish cuisine in her Crispy Reuben Rolls. This inventive take on the classic Reuben sandwich features corned beef, cabbage, Swiss cheese, onions, and a mustard-horseradish sauce all wrapped in pastelito dough.
