Disney is celebrating our favorite heroines all week as part of the Ultimate Princess Celebration! Today is the turn of Cinderella! That’s why we decided to share a recipe that is perfect for fall and inspired in this magical fairytale.

These Cinderella pumpkin waffles are a great option to have for breakfast and start your day like a true princess! Take a look at the easy recipe from Disney Family and have fun:

CINDERELLA PUMPKIN WAFFLES

INGREDIENTS:

• 1 cup of all-purpose flour
• 1 cup of whole wheat flour
• 1 3/4 cup of pumpkin puree
• 1 3/4 cup of light coconut milk
• 2 tbsp of vegetable oil
• 2 eggs
• 1/3 cup of brown sugar
• 1 1/2 tsp of cinnamon
• 1/2 tsp of nutmeg
• 1 1/4 tsp of baking powder
• 1/4 tsp of salt
• Cooking spray
• 2 tbsp of pumpkin seeds

INSTRUCTIONS:

• Preheat waffle iron
• In a large bowl, combine your flours, baking powder, cinnamon, nutmeg and salt.
• Next, make a well in the center of your dry ingredients and add the brown sugar, vegetable oil, light coconut milk, pumpkin puree and eggs. Mix to combine being careful not to overmix.
• Spray your preheated waffle iron with non-stick cooking spray and spread half a cup of batter onto the iron. Cook for 5-8 minutes or until golden brown.
• Garnish your waffles with pumpkin seeds and serve.
