FROZEN 2 CAKE

INGREDIENTS:

Cookie Ingredients

  • 1/4 cup of unsalted butter, softened
  • 1/2 cup of white sugar
  • 1 egg
  • 1/2 tsp of vanilla extract
  • 1 1/2 tbsp of milk
  • 1 1/2 tsp of baking powder
  • 1 1/4 cups of all-purpose flour
  • 2 cups of powdered sugar
  • 1/2 tsp of vanilla extract
  • Food coloring in: Blue, purple, and pink

Cake Ingredients (for two layers)

  • 1 cup of unsalted butter, room temperature
  • 2 cups of sugar
  • 4 eggs
  • 1 1/2 tbsp of vanilla extract
  • 3 cups of all purpose flour
  • 1 tbsp of baking powder
  • 1 cup of milk

Buttercream Frosting Ingredients

  • 1/2 cup of unsalted butter, softened
  • 2 cups of powdered sugar
  • 1 1/2 tsp of vanilla
  • 2 tbsp of milk

INSTRUCTIONS:

  • Bake the cookies that will go around the edges of the cake. Start by combining the butter and sugar until it has a creamy texture. Whisk the egg in a separate bowl, and then add into your mixture. Add the vanilla extract and milk. In a separate bowl, combine the flour and baking powder, then add into your cookie mix, mixing on a high setting until dough is formed. Cover the mixing bowl with plastic wrap, and place in the fridge for about 45 minutes to chill.
  • Preheat oven to 375F. Place cookie dough between two sheets of parchment paper and roll with a rolling pin. Use a diamond-shaped cookie cutter to cut out the dough, and place your cookies on a parchment paper-lined cookie sheet. Bake for 8 minutes.
  • Remove from oven and allow to cool completely before decorating.
  • Prepare the royal icing for your cookies! Mix together the meringue powder and water until foaming. Add in the vanilla extract and powdered sugar, mixing in one cup at a time until smooth.
  • Divide icing into four separate small bowls. In one bowl, add in blue food coloring to make a light blue color; in the second bowl, add a drop of red food coloring to make a light pink shade; in the third bowl, add about 3 drops of purple food coloring; and for your last bowl, mix together one drop of purple and 3 drops of blue food coloring for a blueish-gray color.
  • To decorate the water element cookie, place blue icing in a piping bag with a small round top to do the outline of the design. Add a very small amount of water to the bowl of blue icing to make it thinner, and use the remaining to flood and fill in the design.
  • To decorate the earth element cookie, place some of the blue-gray icing in a piping bag with a small round tip to do the outlines of the design. Add a very small amount of water to the bowl of blue-gray icing to make it thinner, and use the remaining to flood and fill in the design.
  • To decorate the fire element cookie, place some of the purple icing in a piping bag with a small round tip to do the outlines of the design. Add a very small amount of water to the bowl of purple icing to make it thinner, and use the remaining to flood and fill in the design.
  • To decorate the wind element cookie, place the pink frosting in a piping bag. Pipe a boarder on your diamond, and the inside design details you see on the fire element.
  • Set the cookies aside to allow the icing to harden.
  • It’s time to bake the cake! Preheat oven to 350F.
  • Combine the butter and sugar until creamy. Whisk eggs together in a separate bowl. Add to the rest of your mixture. Add the vanilla extract, and combine.
  • In a separate bowl, mix together the baking powder and flour. Add to the rest of the batter and combine. Lastly, add in the milk, and combine.
  • Divide the batter in half and pour into two 8 inch diameter round cake pans. Bake for 30-35 minutes. Allow to cool completely before adding frosting.
  • Prepare your buttercream frosting!
  • Place softened butter in a mixer, mixing until whipped. Add in the powdered sugar, about 1/2 cup at a time, mixing continuously.
  • Add in the vanilla and milk, whipping for about 3 minutes.
  • With one of the cooled cakes, use a sharp knife to carefully trim the rounded top to make the top flat. Then with a piping bag with a large round tip, pipe buttercream on top, spreading smooth.
  • Place the second cake on top of the buttercream, then pipe buttercream on the top and sides of the cake. Smooth over entire cake.

  • Place the cookies along the sides of the cake.
  • Serve and enjoy!
