Let’s celebrate soulfully with this Sukuma Wiki recipe! A dish part of the cooking with soul celebration of food, highlighting ingredients with roots in African and Black American history in honor of Black History Month!
Did you know Sukuma Wiki translates from Swahili to “stretch the week”? It’s served with market-fresh sustainable fish on a bed of yellow rice making it a popular East African dish prepared with onions, garlic, spices and sukuma, known as collard greens.
Chef Sahib, native of Tanzania, remembers this dish as approachable and nourishing. “When things are tough, and meat is scarce, you can depend on these beautiful greens to make this soulful braise”, mentioned Sahib.

SUKUMA WIKI
INGREDIENTS:
- 1/2 cup of canola oil
- 1 cup of diced yellow onions
- 2 cloves of garlic, minced
- 1 tsp of ground cumin
- 1 tsp of ground coriander
- 1/4 tsp of turmeric
- 1 pound of collard greens, washed and chopped
- 1 cup of diced tomatoes
- 2 cups of vegetable stock
- 1 tsp of salt, plus more, to taste
- 1/4 tsp of pepper, plus more, to taste

INSTRUCTIONS:
- Heat canola oil in a Dutch oven over medium heat for 5 minutes, until hot. Add onions and saute for 5-8 minutes, until soft and translucent. Add garlic and cook for 1 minute.
- Add cumin, coriander, and turmeric, and stir for 30 seconds, until very fragrant.
- Slowly add collard greens, making sure all greens are coated in oil and spices. Cook for 2 minutes, until green begin to wit. Stir in tomatoes and vegetable stock. Bring stock to a simmer, cover, and cook over low heat for 20 minutes.
- Add salt and pepper, and season with more, to taste.
