This Mickey Sweet Potato Appetizer is great to celebrate Kwanzaa!
If you celebrate Kwanzaa, this dish is a great treat to have during this week long festivity and you can even make it sweet or savory! Your pick! They are both delicious.

MICKEY SWEET POTATO APPETIZER
INGREDIENTS:
For a sweet appetizer
- 1/4 tsp of cinnamon
- 1/8 tsp of sea salt
- 2 tsp of coconut oil
- Maple syrup or honey
- Candied walnuts
- Dried cranberries
- Large sweet potato
For a savory appetizer
- 2 tsp of olive oil
- Sea salt flakes
- Goat cheese
- Dried cranberries
- Roasted walnuts
- Large sweet potato
Extra equipment
- Mickey shaped cookie cutter

INSTRUCTONS:
- Preheat oven to 425 degrees.
- Wash the sweet potato and peel the skin if desired. Slice rounds approximately 1/4″ thickness. Try to cut them all the same thickness. If desired, use the cutter to cut out the shapes.
- For the sweet version, mix the coconut oil and cinnamon and tumble in a bowl to coat. Or, for the savory version, use the olive oil and tumble in bowl to coat.
- Arrange on a greased or silicone lined baking sheet and sprinkle with salt. Bake for 10 minutes, then flip over and continue baking for about 8 minutes until caramelized.
- Serve the rounds with your choice of sweet or savory toppings, listed above.
