Learn how to make some delicious Matterhorn Macaroons!

Inspired in the iconic attraction at Disneyland, the Matterhorn was the first tubular roller coaster system in the world to send out more than one ride vehicle at a time. It opened back in 1959 and was part of the first major expansion of the park, with a height of 147 feet, a perfect 1/100 scale of the real Matterhorn mountain in Switzerland.

Speaking of Matterhorn Macaroons, did you know there are some differences between macarons and macaroons? In fact, the french macaron is a bit more artistry and technique involved but they both taste really good in their own way!

MATTERHORN MACAROONS

INGREDIENTS:

  • 1 (14 oz) package of unsweetened shredded coconut
  • 2/3 cup of all purpose flour
  • 1/4 tsp of salt
  • 1 (12oz) can of sweetened condense milk
  • 2 cups of white chocolate chips, divided

Matterhorn Macaroons

INSTRUCTIONS:

  • Preheat oven to 350F. Line an ungreased baking sheet with parchment paper and set aside.
  • In a large bowl, stir together coconut, flour, and salt. Add condensed milk and stir until well combined.
  • Wet hands with water and scoop up about 1/2 cup of dough. Form into a mountain shape, then place on prepared baking sheet. Continue with remaining dough, wetting hands between each macaroon, and leaving a 1″ space between each on the baking sheet.
  • Bake until coconut is browning, about 15 minutes. Allow to cool completely, about 20 minutes, on baking sheet.
  • In a medium microwave safe bowl, add 1 3/4 cups of chocolate chips. Microwave on high 30 seconds, stir, then microwave another 15 seconds. Repeat microwaving in 15 seconds increments, stirring between each, until white chocolate just melts.
  • Chop remaining 1/4 cup of chocolate chips roughly with a knife.
  • Once macaroons are cool, dip each macaroon one at a time into melted white chocolate to make a snowy peak, then sprinkle with chopped white chocolate.
