Permit Filed for Space Next to Gideon’s Bakehouse
A new permit filed yesterday has fueled speculation that the immensely popular Gideon’s Bakehouse may be planning a major expansion at Disney Springs. This filing suggests two exciting possibilities: either the bakery is preparing to open a second physical space, or it could be launching a completely new concept nearby.

The construction permit specifically covers a full tenant build-out at the former Art of Shaving location in The Landing, a storefront that has been vacant for nearly a year and sits just a few doors away from the current Gideon’s Bakehouse. The client listed on the public filing is The First Raven LLC, a company led by Steve Lewis, the creator of Gideon’s Bakehouse.
While neither Disney nor Gideon’s has confirmed the venture, the direct link to Lewis suggests a new project. It remains uncertain if the space will operate under the Gideon’s name or if the company is developing an entirely new concept beyond the cookie-focused products that made the original brand a phenomenon.
Gideon’s Bakehouse built its reputation on staggering demand, starting as a small operation in 2016 at Orlando’s East End Market with a single employee and an $800 budget. The nearly half-pound, small-batch cookies quickly became a phenomenon, with lines often exceeding 80 minutes and limited flavors selling out fast. This intense popularity continued at the Disney Springs location, which opened in December 2020 and routinely requires a virtual queue.
Given this history, the new construction permit filed for the former Art of Shaving space—a modest but high-traffic area near the existing bakery—is highly notable. Although details are uncertain until official announcements are made, the involvement of creator Steve Lewis’s company strongly suggests guests may soon have another reason to line up for whatever concept comes next.
