This yummy dessert can be found at Dino-Bites in Disney’s Animal Kingdom, and now you can recreate it at home with this recipe we have for you.
Because who doesn’t love cookies and ice cream right? Specially when they come with pretty sprinkles! So have a fun day baking with your sweetheart and enjoy a delicious valentine ice cream sandwich after!:
VALENTINE ICE CREAM SANDWICH
INGREDIENTS:
- 1 1/2 cups of all purpose flour
- 3/4 cup of unsweetened cocoa powder
- 1/4 tsp of baking powder
- 1/4 tsp of baking soda
- 8 tbsp of unsalted butter, softened
- 8 tbsp of vegetable shortening
- 1/2 tsp of salt
- 3/4 cup of granulated sugar
- 1/2 cup of light brown sugar, packed
- 1 egg
- 1 tbsp of corn syrup
- 1 tsp of vanilla extract
- 1/2 cup of white chocolate chips
- 6 oz of heart shaped sprinkles
- 6 cups of strawberry ice cream

INSTRUCTIONS:
- Start by making the cookies: Preheat the oven to 350F.
- Line a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, cocoa powder, baking soda and baking powder.
- In a large bowl, use a mixer to cream the butter, shortening, brown sugar, granulated sugar and salt together for 1 to 2 minutes. Then, add the egg and mix until incorporated. Third, add the corn syrup and vanilla and mix until combined. Next, add the dry ingredients (cocoa powder, flour, baking powder and baking soda) about a third at a time, mixing after each addition, until just incorporated. Do not overmix. Finally, stir in the white chocolate chips.
- Add about 2/3 cup of heart shaped sprinkles to a small bowl and set aside.
- Using your hands, shape a leveled, 1/4 cup of dough into a 1″ tall cylinder (round with a flat top and bottom). The top diameter of the cylinder should measure 2″.
- Roll the flat top and sides of the dough generously in heart shaped sprinkles.
- Place 6 sprinkle coated balls of dough into the cookie sheet, spacing them a few inches apart so there’s room for the cookies to spread without running into each other.
- Bake 16 to 18 minutes. Once out of the oven, let the cookies sit on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
- Repeat steps 6 through 9 to bake up another 6 cookies. You should have 12 at the end.
- To assemble the Valentine Ice Cream Sandwich: Place 1 cup of strawberry ice cream between two cookies.
- Immediately sprinkle 1 tbsp of heart sprinkles onto the sides of the sandwich and serve!
