Mellow Mushroom Could Be Cooking Up a Slice at Disney Springs
It looks like Disney Springs may soon be getting a little more mellow. Popular pizza chain Mellow Mushroom has shared plans to significantly expand across Central Florida, and Disney Springs is officially on their radar as a potential future location. Known for its psychedelic vibes, stone-baked pizzas, and cult favorite secret dough, the Atlanta-founded brand already operates several successful restaurants around the Orlando area, including spots near SeaWorld, UCF, Winter Park, Sanford, and Mount Dora.

According to Mellow Mushroom leadership, Disney Springs is being considered alongside other fast growing areas like Lake Nona and Clermont as part of a broader metro Orlando expansion strategy. The company sees Central Florida as a major growth opportunity, with plans to potentially add up to 20 locations over the coming years. That growth would be gradual and strategic, with one to two new restaurants opening per year over the next five to seven years, depending on site availability and build out timelines.
If Mellow Mushroom does land at Disney Springs, it would likely be a full service sit down location or possibly their newer fast fine concept, a smaller footprint model with counter service and digital kiosks. That newer format allows the brand to move into busy districts more efficiently while still delivering the creative pizzas, wings, salads, and beer selection fans expect. Either way, a Disney Springs location would fit right in with the district’s eclectic dining lineup and offer guests another fun option when pizza cravings strike between shopping and entertainment.

Nothing has been officially announced yet, and no permits have been filed for a Disney Springs site, but the fact that it is being openly discussed signals that the idea is very much in play. We will be keeping a close eye on this one, because pairing Disney Springs with Mellow Mushroom sounds like a recipe that could really rise.
