It starts with a graham cracker crust with a lemon cake baked on top that is filled with lemon curd, then topped with toasted marshmallow fluff. It’s just like a lemon meringue pie, except this time you get to have lemon cake too! Two features that make this cupcake stand out are the graham cracker crust and the toasted marshmallow top. The crust is a unique touch that brings more of an authentic pie taste to this cupcake, not to mention great texture! The toasted marshmallow mimics the meringue part of the pie perfectly, and you’ll have to excuse me for wishing marshmallows came with fluff more often instead of just frosting. Right?
