This week, where we spent our time undercover at The Marketplace in Disney Springs listening to Steve Lewis, the founder, and owner of Gideon’s Bakehouse, told his story and creation of our favorite cookie and shop.
Steve could very well be the most famous baker in the Disney bubble. His cookie creations have almost reached mythical status. Wait times at the Disney Springs location sometimes reach upwards of 3 hours. Also, his trading cards and menus have become valuable collectibles, with Facebook groups dedicated to trading and selling them.

With all that happening, Steve remains humble and grateful for all he has. His story is one of perseverance through failed businesses, and a 15-year journey to create the almost perfect cookie. Steve gave us an inside look at what it took to create the Disney Springs version of Gideon’s Bakehouse and the pride and joy he felt along the way. His story of the Gargoyle, who he said “it is up to you, the individual, to figure out how to pronounce the name of” being placed atop the Bakehouse was enjoyable.
Stave gave some great advice to others, in a way only Steve could “My best advice is not to listen to my advice, or anyone’s advice” Go after your dream, stick with it, you know what you want was the message.
As always, we find Steve to be a little mysterious, enigmatic, smart, funny, and inspiring. We can honestly say, we have gone to Gideon’s at Disney Springs once a month since day 1, which he showed a video of the opening day line which stretched around all of Springs. We love his creations, we collect the cards and menus, we eat every cookie that comes out, and we enjoy his cakes and peanut butter iced coffee.
