New Expansion Announced at Gideon’s Bakehouse in Disney Springs
For five years, Gideon’s Bakehouse has dominated the culinary scene at Disney Springs with its half-pound cookies and gothic aesthetic. Now, owner Steve Lewis is ready to expand the empire—but this time, he is leaving the sweets (mostly) behind.
To celebrate its 5th anniversary at Disney Springs, the bakery has officially announced a new concept coming to The Landing later this year: Six Ravens.

What is Six Ravens? While Gideon’s is famous for sugar, Six Ravens will focus on savory delights. The star of the menu is a creation called a “Coffyn,” which Lewis describes as “the original term for an old-school hand pie.”
These grab-and-go items will feature fluffy yeast bread filled with savory ingredients. In a move to support the local culinary community, the flavors are being developed in collaboration with some of Central Florida’s top chefs.
“After all, I got my start at Disney Springs as a secret menu item at the Polite Pig,” Lewis shared in the announcement. “It’s important to pay it forward and bring more local flavors to the international crowds we meet every day.”
The Menu In addition to the signature Coffyns, the new location will serve:
- Potatoes
- Local Draft Beer
- Select Desserts
The concept is designed as a small, grab-and-go space to help guests fuel their park adventures without the long wait times associated with the main bakery.
Opening Timeline Six Ravens is scheduled to open at Disney Springs “later this year,” though a specific date has not yet been confirmed. Lewis noted that this year might be the company’s “biggest year of growth,” hinting that more details—and potentially more surprises—are on the horizon.
