Disney Creme Brulee

To bring some more Disney magic into our homes while the parks are closed, we recreated Le Cellier’s Maple Crème Brûlée! Le Cellier, located in the Canada Pavilion at Walt Disney World’s Epcot, has many delectable dishes that we have fallen in love with. Today, though, we’re sharing this Crème Brûlée recipe for those of you stuck in quarantine with a major sweet tooth!

For the ingredients, you’ll need…

  • 2 3/4 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup plus 2 tablespoons granulated sugar
  • 9 egg yolks
  • 1 1/2 tablespoons maple extract
  • 12 teaspoons sugar for caramelized topping
  • 6 ginger-flavored cookies (optional)

The recipe was fairly easy to make and turned out pretty well! First, we started by preheating the oven to 325 degrees, then mixed the heavy whipping cream, milk, and sugar in a medium saucepan over medium heat. We followed the directions according to D23 and brought the mixture to a simmer, stirred until the sugar until it was dissolved, and removed it from the heat once small bubbles appeared around the edges.

Next, we whisked the egg yolks and maple extract together, then slowly added the hot cream mixture while still constantly mixing. Then, we poured equal amounts of the mixture into each of our ramekins. Next, we poured enough hot water into the roasting pan to fill up halfway the sides of the ramekins, then baked the custards for 55 minutes and refrigerated until cool.

Then, we preheated the broiler, sprinkled two teaspoons of brown sugar evenly over each custard, and broiled the custards for about two minutes (until the sugar caramelizes), and refrigerated for two hours until the topping hardened.

All there is left to do is enjoy your Maple Crème Brûlée!
