Disney DIY – Warm Up With These Disney Comfort Food Recipes

I don’t know about you, but this cold wintry weather makes me long for a Walt Disney World vacation more than ever! The wind is howling, the snow is falling, the temperature is dropping…and to make it even worse, I don’t have any WDW trips planned! Talk about seasonal depression! Well, if you’re like me, you can cheer up and WARM up with these Disney DIY Comfort Food Recipes:

ChickenChowder

I LOVE dining at Boma, and one of the reasons I love it so much is their soup selection – they always have several options, and this chicken corn chowder is one I always hope they will have when I am there!


Chicken Corn Chowder (Recipe Courtesy of Magical Recipes)

Ingredients

2 Chicken Breasts, cooked and diced

1 pound Russet Potatoes, cooked and diced

2 cups Corn Kernels (frozen)

1/8 cup Onion, diced

1/8 cup Red Bell Peppers, diced

1 cup Chicken Stock

1 cup Heavy Cream

1 cup Milk

2 t. Sugar

2 t. Hot Sauce

1/8 cup Fresh Parsley, chopped

1 Chicken Bouillon Cube

Instructions

Bring chicken stock to a boil.

Add milk, heavy cream, chicken, potatoes, red peppers, onions, corn, and sugar, simmer for 40 minutes.

Add parsley and hot sauce, simmer for five minutes.

Serve hot

Aunt Liz’s Golden Fried Chicken

Ingredients

Chicken

1. Whole chicken cut into 1/8’s (2 breasts, 2 wings, 2 thighs, 2 legs)

Breading

2. 3/4 cup wheat flour

3. 3/4 cup soy flour

4. 1 tbsp paprika

5. 1 tbsp salt

6. 1 tbsp black pepper

7. 1 tbsp garlic powder

8. 2 oz whole dry eggs

9. 1 tbsp red pepper

2 oz non-fat dry milk

Instructions

Combine all breading ingredients together.

Wash chicken off.

Completely cover chicken with breading.

Deep fry until done.
