This recipe is packed with vegetables, lean protein from chickpeas and heart healthy olive oil plus these Aladdin beet hummus with roasted vegetable chips make a great snack to eat while watching Aladdin on Disney+!

ALADDIN BEET HUMMUS WITH ROASTED VEGETABLE CHIPS
INGREDIENTS:
- 1 medium golden beet, peeled and very thinly sliced
- 1 zucchini, very thinly sliced
- 1 yellow summer squash, very thinly sliced
- 1 medium sweet potato, very thinly sliced
- 1/4 tsp of salt plus a pinch, divided
- 1/2 tsp of black pepper, divided
- 1 small red beet, peeled and cut into 1/2 inch chunks
- Once 15oz can of chickpeas, rinse and drained
- Zest and juice from 1 lemon
- 2 tbsp of tahini
- 1/4 cup of olive oil
- Toasted sesame seeds and poppy seeds, optional

INSTRUCTIONS:
- To make the vegetable chips, preheat the oven to 300F. Grease or spray a baking sheet with cooking spray. Lay the golden beet, zucchini, summer squash, and sweet potato slices on paper towels and sprinkle with a pinch of salt, then allow to stand for 15 minutes.
- Blot any excess moisture from the vegetables with a paper towel, then place them on the prepared baking sheet. Spray cooking spray on the vegetables and sprinkle with 1/4 tsp of the black pepper. Bake for 30 to 35 minutes, rotating the pan once during baking. Allow to cool a bit before serving.
- To make the hummus, steam the red beet chunks for 30 minutes in a vegetable steamer. Let cool, then add the chunks to a food processor with chickpeas, lemon zest and juice, tahini, garlic, olive oil, 1/4 tsp of salt and the remaining 1/4 tsp of black pepper. Process until completely smooth.
- Transfer the hummus to a serving dish and serve alongside the vegetable chips. Sprinkle with sesame seeds and poppy seeds, if desired.
