Michael Mina and Todd English Team Up for Exclusive 10-Course Tasting at Swan and Dolphin Food & Wine Classic
Two culinary heavyweights are joining forces at Walt Disney World this fall, as James Beard Award-winning chefs Michael Mina and Todd English host a special collaborative tasting during the Walt Disney World Swan and Dolphin Food & Wine Classic. The exclusive event takes place Saturday, November 21 from 3:30 to 5 p.m. and will be limited to a small number of guests.

Mina and English will work side by side through a 10-course tasting experience paired with beverage selections from around the world, including pours from Italy and Napa. Along with the food, guests will hear stories from both chefs about their backgrounds, travels, culinary philosophies, and the dishes that helped shape their careers. Both chefs already have a presence at the Walt Disney World Dolphin, with Bourbon Steak by Michael Mina and Todd English’s bluezoo located at the resort.
Mina’s five-course portion of the menu will feature marinated big-eye tuna with crispy falafel and whipped tahina, chilled lobster and mango salad, Aleppo grilled poussin, triple-seared Wagyu striploin, and a basbousa and passionfruit cheesecake. His dishes blend refined technique with flavors inspired by his Middle Eastern heritage and the style found at Bourbon Steak.
English will bring a coastal-inspired lineup influenced by New England and his Boston roots. His dishes include brown butter miso poached lobster, pan-seared Nantucket scallops, house-made cacio e pepe with duckling confit, roasted Chilean sea bass, and a roasted red beet chocolate gateau. Throughout the tasting, both chefs will interact directly with guests and share the stories behind each course.
