This delicious dessert is a must have when you visit Boma at Disney’s Animal Kingdom Lodge, so we are happy to being able to share this easy recipe with you so you can surprise your friends and family!

INGREDIENTS:

Banana Bread Pudding

  • 2 cups of milk
  • 2 cups of heavy cream
  • 1 cup
  • 3 tbsp of sugar
  • 7 eggs, beaten
  • 1 tsp of cinnamon
  • 4 tbsp of butter
  • 3 bananas, sliced
  • 5 cups Croissants, brioche, or challah bread, cubed or one whole loaf of Texas toast, cubed

Vanilla Sauce

  • 3 cups of heavy cream
  • 1 1/2 cups of milk
  • 1 1/2 tsp of vanilla extract
  • 9 tbsp of sugar
  • 2 tbsp of cornstarch
  • 6 egg yolks

INSTRUCTIONS:

Banana Bread Pudding

  • Cut day-old croissant, brioche, challah, or Texas toast into cubes. Set aside.
  • In a large bowl and using an electric mixer, combine milk, cream, sugar, cinnamon, and beaten eggs.
  • In a 9×9 square or round pan, place one layer of bread on bottom. Place bananas on top, followed by a layer of bread.
  • Pour custard mixture over the entire dish, filling it 2/3 to 3/4 full. Press top bread layer into custard to prevent the bread from drying out. Add more custard if necessary.
  • Place butter chunks on top of bread pudding.
  • Bake at 300 degrees for one hour or until an inserted knife comes out clean.
  • Serve with vanilla sauce.

Vanilla Sauce

  • Heat up milk, vanilla, heavy cream, and sugar.
  • Combine cornstarch with egg yolks.
  • Once liquid boils, temper some of the liquid into the yolk and stir vigorously. Then return tempered yolks into the pot.
  • Turn off the heat and stir continuously until well combined and thickened.
  • Transfer the sauce into a bowl and set over an ice bath to cool.
