This chocolate waffle recipe is from one of the Disney parks cookbooks Delicious Disney Sweet Treats, what they used as inspiration was a similar dish that used to be served at Tamu Tamu Refreshments at Disney’s Animal Kingdom! Whether you use this recipe as a dessert or as an extra sweet breakfast, you’re going to want to keep this recipe to make for years to come!
Chocolate Waffles with Espresso Frozen Mousse (Print recipe)
INGREDIENTS
Espresso Mousse Ingredients
- 3 c white chocolate chips
- 4 c heavy cream, divided
- 3 tbsp espresso (or strongly brewed coffee)
- 6 egg yolks
Chocolate Sauce Ingredients
- 1/2 c heavy cream
- 1/2 c sugar
- 1/4 c water
- 2 tsp corn syrup
- 1/4 c + 2 tbsp unsweetened cocoa powder
- 2 tbsp semisweet chocolate chips
Waffles Ingredients
- 1 1/2 c all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1 1/2 tbsp sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 3/4 c milk
- 1 egg
- 1/4 c butter
- 1/8 c semisweet chocolate chips
DIRECTIONS
Espresso Mousse Directions
- Put white chocolate chips in a medium-sized heatproof bowl and set aside.
- Over high heat combine 1 c heavy cream and espresso in a small saucepan, heat mixture until it is very hot (not boiling.) Pour mixture over white chocolate chips, whisk until melted and smooth.
- Add in egg yolks, whisk until smooth.
- Gently fold in whipped cream in white chocolate mixture until smooth.
- Lightly grease a muffin tin and then dollop mousse into each muffin section, then freeze until hard.
Chocolate Sauce Directions
- In a medium saucepan whisk together heavy cream, sugar, water, corn syrup, and cocoa over medium-high heat.
- Constantly whisk over medium-high heat until sugar is dissolved.
- Lower heat to low, and whisk in chocolate chips until it’s melted. Keep sauce warm until ready to use.
Waffles Directions
- In a medium bowl sift together flour, cocoa powder, sugar, baking powder, and salt.
- In a separate bowl whisk milk and egg.
- In a microwave-safe bowl combine butter and chocolate chips. Microwave on high for 20 seconds, then stir for 10 seconds. Afterward microwave for 10 seconds, then stir for 10 seconds. If the combination isn’t completely melted repeat.
- Combine the butter and chocolate mixture to your egg and milk mixture.
- Combine wet and dry ingredients, mix until combined- do not overmix.
- Cook waffles in a waffle iron, using manufacturers’ instructions.
SERVING INSTRUCTIONS
- Remove frozen espresso mousse from the fridge, dip the pan into warm water to help release mousse from the tray.
- Put the mousse on a cooked waffle and drizzle with chocolate sauce, serve immediately.
