Here we are, at the beginning of November- and I don’t know about you, but I have been thinking a lot about Thanksgiving – what to make, who to invite, when to eat – there are a LOT of details that go into making that Turkey day meal, and I like to think about how I can make the day delicious and full of fun, memories, family, and of course – DISNEY! Since I can’t spend my Thanksgiving at the Magic Kingdom enjoying a Turkey Dinner at Liberty Tree Tavern, I thought instead I would try and Disney-up my holiday with some crafts and recipes! Check these out:

Ok, now that the table is set and properly decorated, it’s time to get in the kitchen! Check out these Disney Inspired Thanksgiving Recipes:

Serve these easy to make creamy Cream Cheese Mashed Potatoes from Le Cellier in Epcot – they will pair perfectly with all the Turkey Day dishes!

Cream Cheese Mashed Potatoes

Ingredients

1. 2 pounds Idaho potatoes, peeled

2. 1 stick unsalted butter

3. 1 cup (8 oz) cream cheese

4. 1 cup warmed milk maximum (1/4 cup milk recommended)

5. 1 Tablespoon Kosher salt

6. black pepper to taste

Directions

1. Boil or steam potatoes until tender.

2. Using a food mill or mixer, incorporate all ingredients and adjust seasonings as necessary.

Once the meal is done, it’s time for my favorite part of any meal – DESSERT! There’s always the traditional choices for Thanksgiving Dessert, like Apple Pie, or pumpkin pie, but I think I might try something different this year – and this Pumpkin Cheesecake from Raglan Road Irish Pub sounds like just the thing!

Pumpkin Cheesecake from Raglan Road

Ingredients – Crust

1. 4 oz. digestive biscuits (a common substitute is graham crackers)

2. 2 sticks butter, melted

Ingredients – Spiced Topping

1. 1 medium pumpkin (3 cups of pumpkin flesh peeled, seeded and chopped. You can substitute canned pumpkin for fresh pumpkin in the same amounts)

2. 1/2 tsp. ground cinnamon

3. 1/2 tsp. ground cloves

4. 1/2 tsp. ground nutmeg

5. 1/2 tsp. ground ginger

6. 1 1/2 cups cream cheese

7. 1 1/4 cups solidly packed Demerara sugar (You can substitute light brown sugar)

8. 3 large free-range eggs

9. 1/2 tsp. vanilla extract

10. 1/4 cup Baileys cream liqueur

11. Honey, for drizzling

12. Icing/Confectioner’s sugar, for dusting

13. Fresh mint sprig, to decorate

Directions

1. Preheat the oven to 325 degrees

2. Break the biscuits up in a crumb like consistency in the food processor or by placing them in a freezer bag and bashing them with a rolling pin.

3. Tip into a bowl and mix in the melted butter.

4. Using a large spoon or a potato masher, press the mixture onto the base of a 8in loose-bottomed spring form tin.

5. Bake in the oven for 8-10 minutes, or until just firm. Remove from the oven and allow the mixture to cool down.

6. Place the pumpkin chunks on a baking tray and bake in the oven for 35 to 45 minutes, or until they have softened completely.

7. Transfer to a food processor or blender, then add the spices and blend until completely smooth

8. Leave the blender running for at least 3 minutes.

9. Allow to cool thoroughly.

10. In a large mixing bowl, cream the cheese with the sugar until light and fluffy.

11. Mix in the eggs, spiced pumpkin puree, vanilla extract and Baileys.

12. Make sure the mixture is completely blended together.

13. Pour the mixture on top of the biscuit base and transfer to the oven for 40 to 45 minutes, or until the mixture is set around the edges but still slightly wobbly in the center.

14. Allow to cool slightly, then refrigerate for at least 3 hours but preferably overnight.

15. Drizzle with just a little honey if you like and slice with a hot sharp knife.

16. A shake of icing sugar and a sprig of fresh mint on each slice will finish it perfectly.
