Have you tried the Sugar Frosted Fruit Bites from Flurry of Fun at Disney’s Hollywood Studios? They are a yummy and festive snack. And now, thanks to the Disney Parks Blog, we have the recipe and can make them from the comfort of our own kitchens (and snack on them all year long too!)
Sugar Frosted Fruit Bites – makes 48 bites
Ingredients for Sponge:
- 1 cup all-purpose flour
- 3/4 cup lukewarm water
- 2 tsp instant yeast
Ingredients for Fruit:
- 1/2 cup diced candied orange peel
- 1/2 cup golden raisins
- 1/2 cup diced candied cherries
- 2 tbsp rum
- 1/2 cup sliced almonds
Ingredients for Dough:
- 2 1/2 cups all-purpose flour
- 6 tbsp butter, softened
- 1/3 cup nonfat dry milk
- 1 1/4 tsp salt
- 2 tsp vanilla extract
Ingredients for Vanilla Sugar:
- 3/4 cup butter, melted
- 2 cups sugar
- 1/2 tsp vanilla extract
Topping:
- Powdered Sugar
- Make the sponge by mixing the flour, water and yeast together in a bowl. Rest at room temperature for one hour
- Make the fruit by mixing the orange peel, raisins, cherries and rum together in a bowl. Rest at room temperature for one hour until rum is absorbed and then mix in the almonds.
- Combine the sponge, remaining flour, softened butter, dry milk , sugar, salt and vanilla extra needed for the dough in a bowl.
- Using the dough hook of an electric mixer knead to a soft and shiny dough.
- Add the soaked fruit and any liquid and to the dough and knead until combined.
- Cover dough and allow to rise in a warm spot for 90 to 120 minutes.
- Turn the dough onto a floured cutting board.
- Cut the dough into 48 pieces and roll into 1/2 inch wide by 1 1/2 inch long logs.
- Place 1 inch apart on a prepared baking sheet.
- Cover and rise for 45 minutes, or until puffy
- Preheat oven to 350 degrees
- Bake fruit bites for 18-20 minutes, until light brown. Cool for 10 minutes
- While cooling make the vanilla sugar by melted butter in one bowl and combining the vanilla and sugar in another.
- When ready to serve, coat the bakes fruit bites in melted butter and then roll in the vanilla sugar. Dust with powdered sugar to serve.
Bites may store at room temperature for one week or frozen for 3 months!
